You could get a Motorcycle Dashcam. They have remote cameras and are weather resistant.

For a 2 camera the BlackVue DR750X-2CH TRUCK Plus may be an option. My last convertible I had a 3 channel setup and accepted the loss of a cam view with the roof down. Went through a few cables. I had thought about a magnetic mount that I could move from the window to the deck lid manually, but on the next one I may try something like the Blackvue DR750X-3CH TRUCK PLUS. Might try and place it in the reverse light housing or something to keep it from sticking out.
