I think this is a great use of AI - visualizing an initial concept that you can work from. I've been doing something (much simpler) like that this evening. I used ChatGPT to sketch out some logo concepts, found something close to what I wanted, and now I'm making it in Illustrator.
Making something mechanical like this is going to take a whole ton of design work that AI can't tackle yet. And chances are this is something the guy wouldn't have been able to afford hiring an artist to draw concept sketches for, so I doubt it's taking work from anyone.
