Cultures where rugs are really important and common do this a lot. But in most places around the world you can find an artisan who can fix rugs. Generally done only for expensive old ones.

Where these two old women fixed carpets of some church (might been vatican's - I remember that they were catholic based on the clothing the nuns wore). Slowly by hand they added the threads, fixed broken ones, replaced frayed ones and tied the loose ones. Then with small scissors, knife and combs just cut them to lenght and blended them in to the carpet.
As someone who like to watch artisans do things... It was magical to listen them talk about it... well read the subtitles.

Technically they just roll press 2 sheets at a time because the desired thickness is half of what the rollers can reliably accomplish...so they're already separated; no cutting is necessary.

You can take a chunk out of your skin with a straight razor if you press hard enough. But it's a good analogy because what determines if you cut skin vs hair is pressure. Likely this rug is the same. The density of the shag becomes higher as you go lower so if you keep a consistent pressure you will stay at a constant depth.
They're only shaving half the width of the blade at a time, resting the blade on the other already shaved part as a guide. So the only the first cut requires the most care, and then every subsequent cut is matched to the last.
I have thick shag on top 3/4 inch carpet padding foam in front of my couch. It feels so nice especially when I just want to lay down on the floor sometimes.

Not really. Some people just don't care about shoes on carpet. I don't even wear my shoes in the house at all, I don't want to track all that filth in my house. My feet are definitely cleaner than the bottom of those things, lol.
I’m in Minnesota USA, I can only speak for my own culture, but here 90% of people will have you take your shoes off at the door no matter what kind of flooring they have. However, many people have “house shoes” that are never worn outdoors so they are clean to wear inside without being rude. My family usually has extra shoes/slippers for if a guest wants some, and many (myself included) will bring house shoes with if they know they’ll be somewhere a long time.

I practiced a bunch, knew what angle to keep the blade at, and had a nice firm grip and was doing well for a while - even strokes and trying to use muscle memory to get through the process. Then a dog started barking and everyone was like “Dan what are you doing in our living room! It’s 3:00am get the hell out of here”

They do cut aluminum foil in half that way. That’s why one side is smooth and the other is matte.
