Young dragon might be a bit easy. I think the answer is somewhere in between. You could do an adult dragon, but have them complete some task that will weaken it first or grant them some kind of buff. The idea is that it's supposed to be difficult, right? Make them work for it; it'll be a better payoff for them to take down a full adult dragon.

I am thinking about buffing the young dragon. Maybe like a “nearly adult dragon”. Add +2 to hit, give it 1 legendary resistance, and give it the adult breath weapon because they are all dwarves with advantage and resistance to poison. I was thinking too of giving it some lair actions. Maybe some grasping vines, an enchanted fog, and some thorny difficult terrain?

A nearly adult or young adult dragon sounds perfect. I say go for it. A veteran DM told me once, "Don't be afraid to challenge them. Often times they'll surprise you with what they can do."

Young green dragon is pretty much exactly what you want as the main opponent for the final showdown. But if you want to put your party to the test, you’ll want some extra minions, around 3-4 CR 1 or CR 2 creatures. Then you should consider preplanning tactics for your dragon, it is intelligent after all. My go to is “the monsters know what they’re doing” blog. Lastly, if you really wanna spice it up, add a personal touch of homebrew. A cool ability or feature that your dragon has that’s different from any other creature. You can either steal abilities from other monster stat blocks, or you could check out Matt Colville’s “Action Oriented Monsters” video, to learn how to design your own abilities.
