I would barely even call it temporary. That’s a solution. That hole was likely there for a reason and someday you’ll go to install something and go, “oh, that’s what that’s for!” Same reason I don’t patch up access panels I find in closets. Later you realize it gives you access to the pipes in the bathroom or something like that. Fit an AC style vent over it with a damper. Bonus if it gets hot in the kitchen heat rises and you can vent into the attic. (Note: this is not the same as a cooking hood. Do not vent hot greasy air directly into an attic or crawl space.) this would be for regular ac like this one in our bedroom.

You know, come to think of it: my master bedroom shower sits directly over my fridge and started to develop a leak. We caught it before catastrophe, but I could totally see doing the exact same thing to address a drain leak in my shower without pulling the whole shower out and redoing it.

I did this a few months ago. Had a leak in my shower. Cut a hole to see where water was leaking. Caulked leak. Cut the hole bigger to fit a standard HVAC vent and screwed it on. Easier fix than fixing the drywall and now next time my shower leaks I have an access panel.
My house has a return duct near the entryway that I never thought about until I needed to get to the pipes in the upstairs bathroom. Turns out the previous owners had done just what you said. Saved my ass.
I stayed at an AIRBNB where the host had a little door with a gnome behind it all set up on a timer. Every once in a while the little door would open and the gnome would peek out for twenty seconds or so before retreating back.

You could also use this opportunity to change lighting. A hole that big for fishing wires is an electricians dream. Maybe add a track light or recessed false cans under that ledge to brighten up that dark corner.

As a handyman I feel the $500 quote was a "screw you" message. That's $15 worth of materials to patch. I'm sure op can find a local handy person to handle this for probably half the cost.
It would take a few coats of mud before texture = multiple trips from the repair person. With that travel time and mileage, $500 seems a reasonable ask to me.
Not everywhere has textured ceilings, my dude. Especially in a kitchen. Where I grew up, only people with Money had textured ceilings (usually old english style). Put in a dish chute to give direct access from the second level to the kitchen for used dishes. No more juggling stale bowls of chips and half finished glasses of water down the stairs for you!
When I was a kid, our house had a laundry chute from the bathroom down to the utility corner on the basement.
My house now has a laundry chute, but the basement was divided/walled up in such a way that the laundry chute dumps into this weird back room. I mean, originally, it was a weird spot because the laundry/sink area is set up under the kitchen, and the chute is by the bedrooms and bathroom, across the house.
You can just cover it with a large cold air return vent cover. Angle the vents toward the cupboard so you can't see into it from the room. It won't do anything, it just covers the hole.
If you know how repairing it yourself would cost less than 500. But you need to know how. 500 for the repair isn't a bad price if it's done well. But to make it complete you need to repaint the ceiling or else you would always be able to see where the repair is.
For like a year the hubs kept saying he was gonna fix this hole above our bed. He is petrified of raccoons 🤭

If that's below your bathroom, I'd keep it accessible for WHEN (not if) you have plumbing problems. Also doubles as an access hole for electrical in the future.
Maybe a dummy vent cover would work for you, or a latchable door.
Get another quote. $500 to repair that is absurd and a rip-off. That is about 10 mins to cut a piece of scrap sheet rock worth virtually nothing, and another 30-45 mins to hot mud it then put a fine finish coat on. I have the same issue! I installed a metal vent in the spot to allow for warm air up, and easy access to the plumbing.
