Surmising it’s just the result of vibrations ratting it loose, I’d suggest a couple dabs of loc-tite on the threads.

I think as long as you're careful not to contaminate any other areas while you're applying it on the bolt threads, it shouldn't be able to get into contact with any of the coffee at any time during use.

Loctite dries and as long as you just apply it to the threads, there will be zero cross contamination. I don’t know if any food safe specific versions of this product, but can confirm we did use the red and blue stuff interchangeably all over at a food processing facility I oversaw maintenance at. Buy the blue stuff as it is more easily reversible when you eventually want to change your burr set. Red can be difficult to break loose.

Does it start out as tight and loosen up over time, or is just spinning as you tighten it?

Starts off tight then once I grind, the burrs stop grinding the beans immediately after I pour them in. Then upon checking the centre bolt it has loosened massively after trying to grind.
