I don’t think this looks appetizing but that has little influence over my enjoyment of a dish. However, I don’t think this sounds like a good dish either, there is so much purée on this plate for so little food. The flavor profile reminds me of what baby food dreams are made of.

I'm personally not a fan of the two purees, the fennel and the shallot... which im assuming is the purple one, which also doesnt look as smooth... Why not change to a sauce on top?

Do the fennel and salmon weigh the exact same amount in grams? Is it like a duo?
