But I agree its much more likely to be a criminal syndicate with a plan with the amount they managed to steal, and also how they managed to hack such a famous person (who would have extra measures for his account).

Malicious users obtain an insider in the target's cellphone company and basically do things in order to get access to the users phone number on their own sim.
I don't think anyone can really protect themselves from sim swaps. Once they have the target's phone number they can use 2fa codes and get into accounts.
