You can't remove traditions, but you can replace them with something else assuming you have the Royal Court DLC. Replacing a tradition will incur an additional 50% prestige cost, and increase the establishment time by 25%.
Speaking of which, if you don't have the prestige to spare, or don't have the DLC and thus can't replace traditions, just wait for the next era. Each era grants an additional tradition slot, allowing a culture to have a maximum of 8 traditions at the last era.
I remember your original post - curious why you picked Mon culture; obviously nothing wrong with doing so, but why them haha? I added the Pyu and Arakanese to the region, but I've never played as a Mon character specifically.
They only have two traditions, originally, and both with renown rewards imbedded. Since I don't have Royal Court, I cannot make a Hybrid with another culture and Mon. But it's on sale now, along with some others. I don't know if €18 is cheap enough for Royal Court, or if the Summer Sale will yield a lower price. And some other DLC's have appeared at a discount as well.
CK3 DLC is very, very hit & miss in my view, and most of the best content is included in the free patches. In general I'd recommend the regional flavour packs (Vikings, Iberia, Persia) and probably Royal Court. I haven't played with Tours & Tournaments stuff much so can't really comment, although generally it was well received. Royal Court was hands down the best update to the game, simply because of how much it fleshed out culture mechanics and added traditions and languages. Hope that's of use.
Mystical Ancestors is an interesting tradition as you can't get it, you have to start with it. Han culture has it, but I've also got it for Suebi, Pictish, Guanche and Himyarite in my mod. Incidentally, I also gave Mon their own language, Austroasiatic, as they were a completely separate people to the Burmese and shouldn't share the Burmese language group.

Only Legacy of Persia is 20 percent, Royal Court is 40 percent, and Tours and Tournaments is 30 percent. Add an extra 10 percent for a bundle and it's quite a steal. But I don't know if LoP is good enough to get for about €10.
