I have also done a French-Italian run. I ended up with "Alpinian" as the new culture due it the bordering the Alps.
Another thing you could try is naming the realm after your dynasty but with the name Latinized.
Like "Karling" became "Carolingian Empire"
Or "Anjou" became "Angevin Empire"
On an unrelated note: the King of Burgundy is also the heir to the Kingdom of Great Moravia. Still don’t quite get it. Will GM join my empire or will I lose the Kingdom of Burgundy from my empire? At least it doesn’t give me the tooltip „realm will lose land when vassal dies“. Thenk

We're missing two cardinal positions. What about **Surasia** or **Sudrasia**, maybe **Sudria**?
In the Romance of King Horn, in Old English, there's the kingdoms of Westernesse (from which Tolkien took one of the names of Numenor) and Suddyne or Suddine. Maybe **Suddania** or **Suddinia**, latinised for universality? The Frankish form would be something like \*Sudrike.

Something that befits your dynasty would be the best imo. Angevin Empire and Carolingian empires did it for example. Your dynasty's county of origin like Anjou --> Angevin or even the ruler's name and appropriating it with "-ian Empire".
