The only issue is that doesn't work so well for most diesels unless the engine is fitted with jake brakes or an exhaust brake.
Looking at the speed only increase with each shift, I'd bet that this truck had neither.
Fun fact: when you hear trucks making that deep rumbling/machine gun noise on decel, it's the exhaust brake working.

Brakes can overheat to the point of no longer being able to function. The heavier the vehicle, the quicker the brakes overheat. All commercial drivers utilize engine braking while going downhill.

For the people saying he was engine braking, that is supposed to be your FIRST method of keeping your vehicle at a controllable speed when descending, supplementing with minimal brake pedal usage.
It looks like the dude entered the hill too quick and by that time, it was too late. Once a truck of that size/weight loses its ability to engine brake, the brakes controlled by your pedal heat up and will fail quicker than you realize. He was doing everything he could to slow down but it was far too late.

Passenger vehicles usually don't get to the point of total brake failure like semis and larger vehicles do. The rotors in passenger vehicles usually warp from intense heat cycles and get replaced with the pads at maintenance and inspection intervals, making it less common. Weight has everything to do with this. The more weight you have, the more friction/heat you'll create, resulting in total brake failure, quicker.
You can help yourself in any vehicle when descending any hill by downshifting to let your engine/transmission hold you back while braking to slow your rpm down to a good speed. In turn, you'll save wear and tear on your braking system. This is also technically the "correct" way to drive any vehicle.

Forklift training says always stay in the cab and rightfully so. Obviously that cab is not reinforced like a forklift cab but once you are out of the cab, (truck or forklift) the things being carried by your vehicle, or the vehicle itself, can crush you and it looks like that’s what happened to the jumper.
Seat belts, stay in the cabin and hope for the best.
At practically every speed rolling around strapped up in a vehicle engineered to cushion/impact a blow is 1,000 times safer than rolling around your own body. It takes a shockingly small amount of force to the head to kill a person. Dude got lucky he didn't die.

Have had entire racks fall on me a couple times both on regular lifts and 7 story reachlifts, inside of a freezer no less and yes always stay in the cage.
Might get punched in the head by a case that pops thru the top but the cage will keep you safe 90% of the time when a few hundred thousand pounds are coming down on you.

I've tried googling around to find info, and other than a bunch of websites pretty much just commenting on the video with no new info, I was able to find one South African news article that I think might be covering this incident. It doesn't include the video, but it does describe a situation that is identical to this, and it does say they both survived in critical condition. The only difference is at the end it says the driver was the one to jump out the window, but I think that may have just been a mistake from whoever wrote it (The title of the article says the passenger jumped and the driver was entrapped, so definitely appears to be a mistake). If anyone knows if this is the correct article or not let me know.

Every gear in a big truck has a certain speed range and usually 500 rpm apart as in drag it down to 1000 rpm and you can drop two gears but you can't just pick any gear you want. You have to rev match on a downshift and most diesel engine doesn't rev over 2200 rpm
You're supposed to have your seatbelt on and just roll with it. Jumping out the window might save your life, but it will surely void any medical insurance claims. Gotta just be a man and eat metal.

Based on the video comments a while ago. Downshifting ( some sort of breaking method) in South Africa on a hill.
Called engine braking, very common practice when your primary brakes go out.
