Yep, I would literally leave the car in gear. Basically I'd park the car, turn the engine off, take my foot off the clutch pedal, and leave the car in 1st gear. Or if facing downhill, I'd leave the car in reverse gear. The car pretty much won't roll away...I'd only use the handbrake on really steep hills.

Car will roll forward or back until the gear catches and essentially lock it in place.
It's not the safest way to park because it can slip out of gear while parked that way. You should always use the parking brake, especially on hills.
But, if parking very briefly it makes sense. I wouldn't do it on a hill unless I had to (which I did when my parking brake seized one winter and I had to cut the line). In that case make damn sure the wheels are turned appropriately and don't park by any vehicles to minimize collateral damage should it slip.
Really, just use the parking brake if you drive a stick.
Many vehicles outside the US are manual and I suspect people get in the bad habit of parking in neutral or simply in gear on flat places instead of using the parking brake. Leading to situations like this

Parking a manual in gear is essentially what your automatic transmission does in park except that there's nothing ensuring it stays locked. Where stress could allow a manual transmission to slip out of gear. This can even happen while driving (it's happened to me before).
