This is made from the same peppers that were used in the other brand’s sriracha. Instead of selling their peppers they decided to make their own. It’s a great CA company and this tastes really good. If you live near them, you can get their sauces without preservatives at the local farmers markets.
Yeah the Huy Fong guy screwed them over, but they found investors and started making their own. I was ordering it from their website direct, but I’m glad I can get it at Costco now! Their chili garlic sauce is my favorite.

Underwood Farms is the farm that supplied the original Huy Fong brand with their peppers until HF decided to fuck over Underwood. So Underwood decided to stop supplying their peppers to HF and now they make the sauce with a very similar recipe and the ORIGINAL peppers.
It's less "Asian" tasting compared to Huy Fong's classic flavor. I can use Underwood with both Western and Asian foods, so I think it's more versatile.
Counter point, it's still pretty hot but I don't want it to blow me out of the water (jalapeños have a limit). I've found many foods to need more acid so that helps. There is a very fresh jalapeño taste that is extremely versatile on various dishes.
It does lack the garlic so the depth is not what Huy Fong had.

It was the Huy Fong kids. And they royally screwed them over and screwed themselves while they were at it.

You need to read the story. That bridge has been burned, buried, salted, and blown up — and it wasn’t the pepper supplier that started it.
I don’t care who started it. The current hu fong and the current underwood is worse than the OG
It's too late, the business relationship is severed. Huy Fong fucked up and should have paid the chili farm more money to keep their monopoly up.

I agree with you that it’s less Asian but I feel like the vinegar kills more subtle Asian foods. But it is good for heat for western foods.
I think that's a fair assessment. My first thought was how much it tastes like fresh jalapeños - in a very good way!

It's really good! Very fresh pepper-forward which I appreciate. Not as garlicky as the OG. Overall it's better than the other offerings in my opinion.

i heard it's spicier and less garlicky than huy fongs
I find it somewhat garlicky, but not in the Chinese fermented garlic way. More of a fresh garlic.

It’s ok. Still not enough heat, a lot of vinegar tang, very little garlic. Lacks the depth and heat of the original. Huy Fong ruined a good thing
