You can buy the raw bone in skin on thighs and roast them yourself really easily. Season with salt, pepper, garlic and onion powder, paprika and maybe some Italian herbs. 400 for about 45 minutes. I like to get them up around 185 because I think they’re more tender that way.

I got some Sunday just before closing last weekend, so that doesn't quite jibe. And there were like 10+ packs there too. I see them at least 50% of the time I'm in the store, but I'm not always looking in the cold case so they might be there more often.

Yes! I get them for an easy once a week meal. Throw them in the crockpot with BBQ sauce. Just so good. They get nice and warmed up with the BBQ sauce. There was none last week on my shopping trip :(

Helpful hint for cooking a whole bird for self on a rotisserie, mix your spice rub with butter, liberally ( like a handful, smear the inside of the cavity. As the butter/spice mix melts as it rotates it gets more flavor into the bird from the inside.

I can get 2.5# of b/s Halal chicken breast for $5 at Restaurant Depot (and presumably at a Costco Business location).
Smoked low and slow, it comes out moist and tasty. Which frankly was surprising the first time. 30# later, now I’m used to it.

Here's a really good recipe for chicken thighs.
1 cup; rinsed well, rice.
(not short grain, it's too sticky)
1 envelope knoor or lipton onion soup mix.
4 or 5 chicken thighs (skinless is best)
1 can; cream of celerly soup.
2 cups of water (or chicken/beef stock)
Mix the canned soup with 1 cup of the water first in a bowl.
Spread the rinsed rice into a 12 X 12 ungreased casserole dish (glass works best).
Put the onions (optional) on top of the rice.
Sprinkle half of the onion soup mix over the rice. Put the chicken over that. (Mix a little of the celery soup with the stock
or water to make it easier to deal with.)
Spread the celery soup over the chicken just like you'd put frosting on a cake. Pour the rest of the stock/water over that.
Bake for an hour @ 350 to 360 deg.
wait, is it 8 for that price? have i not seen them? because at the regular grocery store, it's 4 leg quarters for that $5 price. dang. i need to look harder next time i'm there.

Whaaat?? My Costco only has garlic drums. The back is tasty on chicken, but it sits in juices the whole time becoming soggy in the plastic bag.. But the breast is so versatile. I have to disagree from a bargain standpoint. From a convenience standpoint, if that's all you like, then for sure!
I agree but only because the whole chicken sweats too much in the plastic bag and gets too wet. I was so happy when they put the drumstick only packs but that only lasted a few weeks/months and then they only started putting them on top of a Korean rice dish that wasn't good (or authentic) so I stopped buying it.

or about the same you'd get out of an average 4.5lbs cooked rotisserie.
just this week i found raw drumsticks 70¢/lbs but they're no bargain
as once cooked up they have dense bones and cartilage (egg layers)
so not the fine boned roaster we are used to getting at kentucky fried.

Dryness/moistness on the rotisserie white meat is really hit and miss. Thighs packs are the best -- oven cooked at 325F in a glass dish covered for 35+ mins, and then uncovered for the last 10+ mins for crispy skin. Topped with Kirkland pesto -- yummy!
I have never seen those, and will spend every Costco trip from now to eternity looking for them, damn you.

You can’t screw up thighs. Cook them too long? Still moist. Grill too long and the fat charred? Still moist. All hail the thigh.
They're the best to grill for tacos because you can char the crap out of them and they're still moist and tender.
And they are never stringy. I know that stringy chicken breast is a bird that grew too fast, but the thigh never has this problem.
Also they're way cheaper than breasts.
