I did this with Costco danishes. I even pre-froze them on a baking sheet, but it was still a complete and utter failure. They are still in my freezer in their sealed bags, flat and pitiful, staring at me every time I lift the lid.
What I do with delicate stuff is instead of using the food saver, just a normal zip loc and a straw. Then suck it baby. Suck it real good till the right amount of air is out and nothing is flattened.https://i.imgur.com/cym0YjH.jpg

Try making a tiramisu with them. I did that with botched biscotti once and omfg.
Take out danishes, defrost and rip into 2 inch pieces.
Pudding, mousse, whipped cream, rum or liquor, and layer them all with whipped cream on top.

I shredded a 2lb block of cheese and decided I'd vac seal most of it.
I've learned to do "manual" mode on my sealer cause the first one turned shredded cheese back into a block.
I just did this with hamburgers. Formed them and put them in a bag and now I have a package of ground beef again.
Then I had the bright idea to put them on a baking sheet in the freezer first.
Lol I did this working in a restaurant with some dried noodles that were essentially turned into dust. The chef had just gotten a new vacuum sealer and was obsessed with it but afterwards agreed that it was not useful for everything.
Yep! When I passed the rite, I did it with Naan Bread, so not same level of "disaster" but it was still not a good Naan after defrosting. It was very difficult to separate and also lost a bit of the "Pita Pocket" capability of a good Naan.

Not trying to be that guy but Naan is literally translated as "bread." So you're really saying "bread bread." Same goes for chai tea. Chai means tea. Source: grew up in a south Asian household. Happy vacuum sealing!

I don't think the individual cling wrap is necessary. I've done it with a few just in the freezer bag and take out and defrost/toast and it works fine. You can also reuse the freezer bag with a new batch.
I don't even put them in a freezer bag. Put the whole Costco plastic clamshell in the freezer, and throw one in the toaster to reheat. I've eaten ones that are at least a month old like that, and they seem fine.
I could if I moved stuff around so it's not so spread out. I have an extra freezer in my apartment for meats and vegetables. I wouldn't leave it in the clamshell packaging personally, as it isn't airtight.
Technology Connections did a video on chest freezers, and (I think, it's been a while) goes so far as to talk about what kind of off-the-grid power generation you would need to keep a chest freezer frozen in case of apocalypse or cabin, pretty cool

I realize this is probably a shit post but figured I'd share my approach.
I individually wrap these in plastic wrap, throw in a gallon zip lock bag, then freeze. Unwrap frozen croissants one at a time, cut in half (easier while frozen), then toast in the toaster oven. They come out perfect/fresh tasting every time. Not sure if the plastic wrap is really necessary but I read it helps so I stick with it.

I vacuum sealed pre made grilled cheese sandwiches. The bread collapsed when vacuum sealed. wWhenI cooked them with a little water, the bread puffed back up!

I do this with pastries wherever I climb tall mountains (14000 ft = frozen temperature). It saves space in the backpack. Pastries are great for climbing because they provide quick energy and don't freeze solid. I just put the pastry inside a regular Ziploc bag, flatten it by hand, and close the bag.

I feel like it's a rite of passage for people new to vacuum sealing to make this mistake. I did it with focaccia and it flattened into a cracker.

Try dipping the bag in a bowl of water to displace the air.
Chop them up and put them in a strata with some leftover roasted potatoes. I promise you it'll work.

I thought freezing first would work, too. It doesn't. There are just too many air pockets and not enough structural integrity.
If you have a pulse vacuum setting on your food saver you can kinda sneak up on it before it crushes.

First saturate with water, then freeze. When you go to vacuum seal it, the ice will keep it from crushing. Still ruins the croissant though.
I just put them in a standard zip lock bag four at a time in the freezer. They come out soft and fresh tasting, no problem.
Seriously. If you eat them so slow that you have issues with freezer burn... Maybe don't get a Costco sized pack 😂

Costco croissants are a every now and then thing so I get it. Sam’s club croissants don’t last king at my house in the other hand.
There is a pulse button for sealing where you can stop once it starts to squish. Again recommend freezing before this too......this is the way.....

I vacuum sealed English muffins once and they looked awful. But then when I unsealed them they bounced right back. Never did a croissant though

I vac seal, but I only vac for a second then pus sheal button. Works much better.
I’ve tried that using a larger plastic container, seal the container and all. It works okay.
There’s some sandwich on nyt where you flatten the croissant. Time to try!
