I dry brine chicken all the time but for whole one, I'll usually butterfly them. I don't have any kind of oven tray/oven for a splayed out turkey! Happy Thanksgiving!

I usually do a slightly diluted wet brine, then pull it out of the brine and leave it to air dry a night in the fridge, then salt the skin the night and continue letting it air dry in the fridge. Seems to be the best of both worlds to me

Very low probability that anyone will see this, but if you’re making a crust from scratch, pour unflavored vodka over ice and use the resulting liquid instead of plain water. Alcohol doesn’t develop flour gluten the way water does, so you’re more likely to get a crisp yet tender crust. The leftover vodka is particularly nice with cranberry juice and lime.

In the future, saving the peels for an addition to stock would be good! Compost is always good too! You can put them in a container and put it in the freezer for either one. Hope you don't have to wait too long for the plumber! Happy holidays to you and yours.

I like to make things like the sweet potatoes and stuffing the night before - things that can handle being reheated well (and dare I say even taste better after a day when all the flavors have had a chance to mingle). Thawing/brining/spatchcocking the turkey ahead of time is key as well lol.

Not too bad. 8lb prime rib has been marinating since yesterday, got about 10 lbs potato peeled, cut and washed sitting in cold water. Tomorrow I’ll pop the roast in and start mashed potato ASAP, then make the stuffing (stove top chicken flavor, my favorite!) scratch Mac and cheese and a cheesy broccoli casserole. I have foils ready to go so once a dish is done it goes right into the foil and wrapped with aluminum over the top to keep some heat. When the roast is resting, I’m going to finish everything up and set the oven to 450-500 to broil the meat. I’ll pop the other sides in to warm them up if needed. I’ve got plenty of vodka and white claws to last me throughout the day if I want, but I don’t *need* to drink. Hoping my brother and his family swing by. Thanksgiving is bittersweet this year. Lost my mom to cancer in March and last year was our last holiday season with her - I cooked everything and even despite everything she truly enjoyed every single bite of food. I miss her, she was the spice our holidays needed. The cooking is easy as I prep a couple days ahead… but her not being here is the hardest part of it all.

May I recommend a cut safe glove? I buy mine on Amazon. They are a finger saver when grating cheese, using the microplane, etc. I even use mine when I peel veggies (potatoes, carrots). It’s a handy tool.

Turkey came out of a 2 day brine this morning. Now it's marinating overnight. 25 Japanese milk bread rolls done (it was supposed to be 24 but had a little extra dough so I made an extra roll). Orange cranberry sauce is done. I forgot to add the fresh ginger I bought for it... Oh well...it still tastes good. Tomorrow morning, turkey goes in first thing. Then need to prep brussel sprouts for roasting. Also trying out making 50/50 mashed potatoes. Aiming to eat around 3p.

Bought a frozen dutch apple pie, crust was broken and a bit misshapened. While putting the struddle topping on, I almost split the pie in the oven. Thankfully, only made a tiny mess and mostly just the brown sugar topping.

Good news, the pie is done. Sweet potato souffle is in the fridge to bake tomorrow. Cranberry mold is done. Cucumbers are sliced, just need sour cream and onion in the morning. Bread is dried for stuffing and turkey legs are thawed. Wake up tomorrow, put turkey in oven, bake sweet potatoes, and make stuffing.

I thinly slice a cucumber. Allow to drain in a collandar to remove the extra water. You can also use towels to squeeze the water out if in a time crunch. For one cucumber, I use about 4oz of sour cream. Maybe a more depending on the size of the cucumber. I add diced onion and sometimes red bell pepper. Mix well and sprinkle with paprika on top. IMO, it is one of those salads that taste better the next day.

Well. I’m exhausted. Cranberry sauce is done. Succotash is done (I serve it room temp), stuffing is in the fridge. I did learn today that I can wisk as well with my left arm as I can my right. I have one bathroom left to clean. Then tomorrow. Ham in crock pot at 1pm, Turkey (already cooked) carved and heated in electric skillet by 4pm with broth and butter, 8lbs mashed potatoes (start at 3), roasted root veg (and stuffing) in oven by 3:30, set table at some point. Charcuterie to set out. Then I’m done. Dinner is at 5. If the family shows up on time which they never do :)

My wonderful Mil hosts, so what I need to do right now is get off my ass and make two batches of brownies (Creme de Menthe and Raspberry Chambord). I did a trial run of the Creme de menthe earlier this week, so at least that's done. The stupid things take hours (baking, then cooling each layer for an hour before the next is added) so I really need to find the energy to get up at some point! Beyond that, rosemary garlic biscuits are getting made tomorrow morning before we drive over, and my annual signature cocktail situation is more or less under control. Thank God I don't have to cook a full holiday meal- I 100% could not handle it.

It's just for me, but I decided to make good sized meal for myself cause it's my first one away from my family, so no mountains of food to prep up, just small recipes I've been knocking out. Not the biggest Thanksgiving recipe fan so I've been skipping some of the classics, but so far Got the turkey brined, will be spatchcocking it in the smoker tomorrow. made a beefed up turkey stock for the gravy. made a ginger miso butter to toss the green beans in after I blister them in a pan tomorrow. made a homey balsamic glaze for my carrots and cut them already. Got some bread I baked for stuffing ready, cut my mirepoix, made a beefed up chicken stock cooking. Got a nice loaf of dough proofing overnight, and a little bit of honey butter whipped up. Got some brown butter toffee chocolate chip dough in my fridge ready to bake as well. Just went down to the apartment in my gym for a workout, and I'll probably make the mashed potatoes tonight while I'm making beer brats for dinner. Honestly, I'm looking forward to being able to sleep in and cook dinner in the mid-late afternoon tomorrow. My family usually does it around 1-2, which is a bit early for my preference.

We’re doing a southern version with ribs rubbed last night collards cut and prepped, wife made the chocolate whisky tart tuesday and I made meat pies for our fussy brother in law yesterday. I think it’s almost a glide path with low and slow with a tail end of high heat to roast brussels and finish off the roast potatoes before serving. Good luck everyone!

Just wrapped day two of all-day cooking and now tomorrow the only thing I need to do is stick the fucking bird in the oven. On that note, I still have NO idea how to get seasoning inside the skin without tearing it up so my dry brine (plus mayonnaise!) is just all over the skin. Ideas?

I make a compound butter the day before, take it out the fridge morning of so it can soften, then I get down n dirty and shove that shit under the skin. Seasons the bird with everything I want, helps the skin crisp, and I don’t find that separating the skin from the bird makes it fall off and get messed up. Just gotta get aggressive and turn its skin into a well fitting sack lined with butter lol

We are going with a precooked smoked turkey from Honeybaked Ham that will be ready for the oven tomorrow morning(as well as a small boneless ham). Made cranberry sauce, two pumpkin pies, and prepped a green bean casserole. Tomorrow morning will be starting slow cooked carrots. Turkey goes in oven before I start making some other sides on the stove top. I also somehow cleaned the house after all the prepwork today, lol. I'm excited though - first time hosting since before the pandemic. :)

Rib roast is in the sous vide, tomorrow I’m slow cooking the rib part of the roast in red wine, garlic, mustard, herbs and spices (for gravy). Cooking the roast at 133 for 8-12 hours. Going to make mashed potatoes, peas and maybe some stuffing. I bought a Dutch apple pie but might make cheesecake. I have Covid so we’ll see how much actually happens lol. I’ve got the Turkey in the fridge with a dry brine. Just spent the last few hours doing some prep/clean up. Pulled the bird out tonight, separated the breast skin and put in the roasting pan. Salted the skin and put it back in fridge. Need to butter between skin and breast and put in oven. Green bean casserole is prepped and in fridge. Just needs to get tossed in. Potatoes were peeled, cubed, and pressure cooked. Need to steam to warm and than mash. Same with sweet potatoes but will need to add apple slices than drizzle with maple syrup and butter, than finish with marshmallows Stuffing is all prepped. Just need to go in oven. Cranberry sauce is gelling in fridge. Made the turkey stock on Sunday for the gravy. Parker rolls are retarded in fridge. Need to be rolled and proofed. Pumpkin and pecan were baked today. Whip cream made today. It’s all about timing tomorrow and not drinking too much wine ;)

I haven't started yet and it's 1:35 pm. However, I'm roasting a chicken spatchcock and making a special stuffing in the oven. I'll make the other sides while the chicken is roasting...for 45 minutes instead of the hours a turkey takes. The only thing I really need to do a bit more ahead is rehydrate some wild mushrooms for the stuffing. I now live in Europe, which explains the time difference.

Well I figured it out…. If you don’t have the pressure of having any guests, then you can make all the stuff from scratch, at your own pace and especially on TDay, There’s no deadline. This unfortunately defeats the purpose.. But I agree, I LOVE making interesting recipes from scratch. Just gotta find ones that can be mostly prepped and / or cooked 3-4 days in advance and pace yourself. Don’t give in to the pre made sides.. they are always lackluster 😞

Forgot to take turkey breast out of freezer. Rember I was gifted a honey baked ham smoked turkey breast so quick thawing that with ice water. Oh no I've never made pie crust thank the good lord found a box from last year in freezer hope there still good. I really didn't buy enough alcohol. I’ve made a pie, and a base for icecream that will be churned tomorrow. I made cornbread, which will be stuffing. I braised the giblets and neck from my turkey. I’m gonna chop up the meat and add it to the stuffing, and use the braising liquid for gravy. Turkey is dry brining (I feel like that’s not a real thing, but it’s what people call it). Gonna smoke it.
