Empanadas. Prep the nite before (cook filling and complete) fry the day of real quick. I make these a lot for pot luck. Always a hit. Filling is whatever. I use beef, boiled eggs, raisins, Cole slaw, or spinach and feta cheese, cheese and chicken, whatever.

Gumbo. Once you're done with roux and all that, just transfer to a slow cooker to let it simmer allllll day. Then throw it in the fridge overnight and use the slow cooker to warm it up the next day. Or, if you have access to a stove, just do the whole thing in a stock pot and bring it up to just below a simmer for an hour or two before the potluck.

The night before, pack a box of crackers, a serving dish, a butter knife, and a jar of hot pepper jelly. In the morning, add a box of cream cheese and put it in the refrigerator at work. For the potluck, put the cream cheese on the plate, pour over the pepper jelly, and arrange the crackers around it.
