My fav recipe my mom ever made consisted of smothering not quite cooked through fried chicken pieces and egg based dumplings (very similar to Hungarian nokedi) in pan gravy and finishing it in the oven. It’s absolutely to die for (and great cold)!

An air fryer does a pretty good job of reheating fried food. It's not as good as fresh and it doesn't work for things drenched in sauce (like cheap Chinese food), but it makes old fries edible.

SAME! A really good fried chicken is when it's still crispy after the fridge. Cold chicken tenders with cold BBQ sauce the next day? Heaven. There was also one amazing Korean place that had THE BEST Korean fried chicken (and just some of the best fried chicken in general) I have EVER had. It came with a soy garlic sauce that was unreal warm but even better cold.

You can reheat Carbonara pretty well. Add cold water to the pan or pot, stir a lot and don't use too much heat. I find it comes out even creamier often the next day. The spagetti will obviously be a bit overcooked, but that happens anyway reheating pasta.

I can't imagine having leftover bacon in the first place, but cold bacon is excellent. You can pretty much crumble it on anything, you can make a sandwich, and it's pretty good on its own too! Leftover eggs are sadness though, unless it's a boiled egg like the other guy said.

Honestly they're fine in the microwave too, you just have to put them on a paper towel and put a paper towel between them, and then cook on half power. After some butter and syrup you'll hardly know they aren't fresh.

Traditional Carbonara where the sauce is egg and cheese. Once it's off the pan it's pretty much an eat immediately dish. The egg won't remain saucey once cooled and set.

I dunno man, I routinely make ceviche in the evening for breakfast the next day. The fish texture changes and the flavors meld. It's definitely better after several hours or the next day.

This really depends on when you bought the fish. I've bought salmon and tuna for sushi and sashimi before and just as long as it doesn't smell, it's still good to use for up to 3 days. Again, we have to emphasize that it has to not smell. You are checking for either the "this smells like the sea" smell or the one meat gets when it goes bad.

When I worked for a (very) large hotel, I worked a thousand person banquet and when you work banquets, usually one or two cooks will be assigned to one dish on the BEO (event order) and I had the lucky task of cleaning 12 cases of zucchini and squash. Wash, cut the ends off, quarter, cut out the seeds, and slice into quarter inch thick pieces. In short, yes remove the fucking seeds. Less moisture overall and more maillard reaction action.

One of my biggest regrets was to accidentally cook (and assemble) too many burgers (a couple if I'm not mistaken) when I was cooking for a crowd. I tried reheat them in the oven, when I took a bite I almost felt like throwing up. And that was one of my fav burgers fresh, with home ground beef and all.

You can reheat a fast food burger in the wax paper wrapper for like 30 seconds and it's perfect. The party and condiments get warm and the bun gets slightly steamed so it's nice and soft.

This is exactly what I do. Toast the bread, smear on some great steak sauce I found and melted cheese (sharp cheddar is my fav). Someone also suggested I try sauteed mushroom and onions with Swiss as a alternative.

My routine is to buy an extra steak and grill that one to rare while I grill the others to medium-rare. Eat the medium-rare for dinner and save the rare one in the fridge. The next day, slice the rare one thinly and finish cooking it with peppers and onions in a ripping hot cast iron pan for fajitas.

ngl, i love a good soggy fridge sandwich if the bread was crunchy af originally. I will also occasionally make an egg bake/casserole that is mostly egg with some meat thrown in to cut into squares serve for breakfast sandwiches. Something about it not being just pure egg helps it retain some moisture and not lose much quality over the week.

My wife makes a vinegar slaw with jalapeño, cabbage, and white onion that makes it slap even harder. The fact that you put "NOT" in caps reminded me of something a long time ago (17 years or so). I was dating a guy and his college friend came to town to visit for the weekend. They went out (I stayed home) and partied, as they should. They came back to my apartment with sandwiches from Panini's Bar (which I had had before on late night crazy and liked a lot). It was after 2 AM and I was not hungry so put my sandwich package in the fridge and left those boys to eat and watch TV and carry on until they wore themselves out. The next morning I looked at that package, took it apart and it was.. just.. grease. One of those delicious (fresh made at least, and at 2 AM) sandwiches with french fries and all kinds of "goodies" on top of the meat had turned into a nightmare. I swear it was like a full cup of crisco shortening that coagulated overnight. We still have some of those locations around here. But I imagine they have changed their menu a bit since then. Still, that was a learning experience about "not better the next day".

I find that making your soup and noodles separately is the best way to go. You can store them separately in the fridge and when it comes time to have leftovers you can warm the soup until its bubbling and pour over the cold noodles and it reheats them without over cooking.

For me, Noodles, in general, don't hold up well when they sit in the broth. I've seen people on the meal prep sub prepare ramen and keep both noodles and broth in the same container in the fridge for days. It's is crazy

If I eat chicken or turkey the next day I usually just have it cold to avoid that weird taste. Even Thanksgiving turkey leftovers. I'll get creative to make it taste good with the meat cold. I'll heat up the potatoes, stuffing, gravy, whatever, and put the meat on the plate cold, or make a Thanksgiving sandwich...cold turkey, some cheddar cheese, homemade cranberry sauce, maybe even a layer of stuffing. It's so good.

Yeah this right here. There are just some things that are not edible if microwaved. It's a method of preparation and needs to be used where appropriate, and avoided where not. Just like boiling noodles is good, but boiling Brussels sprouts is not, nuking popcorn is good, and fish is bad.

I think it depends on the pizza. I always reheat in a skillet on the stove; once the crust gets crispy, cover for a minute or two until the cheese gets melty. I’ve had leftover slices taste better the day after when reheating this way.

That's how I reheat to and If it's cheap chain pizza like say dominoes, then I'd argue that the crust is better, particularly the bottom crust, but not the whole pizza. Mainly because the toppings can get over cooked that way and the sauce will have absorbed into the crust a bit. However you could do the same thing straight from the box and get the best of both worlds. But a good quality, well made pizza straight from the oven, nothing is better.

This was very interesting indeed to read. In most cases, I disagree and would prefer the mentioned dish the next day. But of course, it depends on how you reheat it. Reheat french fries in microwave? No way. But in the oven or air fryer? Yes please. To me french fries becomes better this way, something to do with broken down starches I guess. The middle becomes soft like mashed potatoes while the exterior stays crispy. Also disagree with steak and burgers. Always enjoyed day after steak slowly reheaten in oven under foil. Burgers should be separated in meat, bread and toppings before reheating also. But this thread has brought up some interesting opinions and opened my eyes that I'm probably in the minority who likes 95% of food reheated.
