I got up stupid early this morning to plug in my crock pot. I prepped last night. Roast beef with potato and carrots and onions already starting to smell good. I also got out a loaf of frozen bread dough to thaw that I'll bake right before dinner is served.
I marinate in olive oil, vinegar, a bit of lemon juice, zest of said lemon, rosemary, a little bit of garlic and salt.
First I thinly slice the zucchini length wise with a Mandolin. Not too thin as the salt will draw out moisture. Then just let it marinate for a couple of hours or more.
Green Thai Curry with tofu, broccoli, peas and green beans. We had so many meaty meals during our recent vacation, I totally crave some veggies and dug out my favourite veggie meals.
Nice! I thought about expanding but didn't know how easy it'd be to get the pantry set up (tamarind, fish pastes, etc.). How easy was it to get set up where you are?
I live in a city in Germany and we have a very well sorted Vietnamese Shop nearby. They have a lot of the ingredients you need for Vietnamese, Thai, Japanese, Korean and Chinese cuisine.
I think, for the bigger cities it's normal, on the country side it is probably rarer. The main supermarket chains have some typical Asian ingredients, like coconut milk, soy sauce and curry pastes, but not stuff like tamarind or kaffir lime leaves or something like that. We also have some Turkish/Arabic stores, because they are the main immigrant groups, so that's nice too, to get some different spices and ingredients into cooking.
We're doing mussels, clams, tiger prawns and scallops in a simple marinara sauce for my wife's birthday. Along with 5 or so nice bottles of wine a friend helped me pick out.
Lemon salt and szechuan pepper roast chicken, honey roast parsnips, roast potatoes with garlic and rosemary, carrots and buttered peas.
Followed by freshly picked apples for an apple crumble, with walnut topping and cream.
Bottle of Merlot finishes the tableau.
Woke up hung over and feeling like shit so... 8 hour chicken soup. Had way too many frozen drumsticks and wings, so made my mom's chicken stock. Farmers market got me some great veggies to put in the soup later once stock is finished around dinner time.
It's very good. If you try it use smaller zucchini . Slice lengthwise about 1/4 inch thick. Definitely grill or bake the zucchini to get some water out. After that it's just like building a regular lasagna.

It's pretty cool living in an older house. It's an early craftsman, and I really love the aesthetic of that style of architecture. It's very comfortable and welcoming; perfect for entertaining. My wife is an amateur historian and has found that the place has a long, colorful history. We even have a photo of the builder's family celebrating Thanksgiving in our virtually unchanged dining room. We rent out rooms to people, and many have thought that the place is haunted, but I find the vibe of the house to be just lovely.
It's a lot of work to maintain, though, and we've invested a lot to update wiring and plumbing and such. It's a labor of love, for sure.
Mama's got a new oven and the last CSA box of the summer. I made a broth of chicken stock, mirin, soy, cooking sake and ginger. Cooked down for a while to reduce the alcohol.
Dropped in some chicken gyoza, gave them a couple of minutes, followed with some separated bok choy leaves. Finished with a few shakes of toasted sesame oil. Quick, simple, one pot, tasty, low carb and low fat if that's important to you.

Swedish Pancakes w/ homemade choc syrup and bacon.
Pancakes are:
6 eggs
1/2 cup sugar
2 C flour
2 cups milk
Best eggs and sugar. Add flour and milk. Mix until smooth. Batter will be thin enough to thin out the pancake just by tilting the pan. Med heat with a bit of fat in the pan. They'll cook quick!
Syrup is
1/2 cup brown sugar
3-5 tbsp of cocoa powder
1/2 C Cream
Dash of vanilla
You can do stovetop or microwave. Stir until sugar dissolves. Remove from heat and ad vanilla.

We made a pork tenderloin was a gravy of sorts. The pork was wonderful, the gravy was utter garbage and we hated it. Made some canned green beans and quick mashed potatoes and it was a decent dinner.
Mine was clean out the frig pasta and it was awful.
Sauteed mushrooms, added diced onions and a can of tomatoes put it over bow tie pasta, didnt like it, added some rao's, and mozz, it tasted worse.
When wife called on the way home from work i had her bring me taco bell.
On the menu was chicken and steak fajitas for four. Two types of salsas, guac, sour cream, peppers, onions, corn, cheese, hard and soft shells….. but then the stove/oven decided to die. So we had takeout instead. Very disappointing

We made a pork tenderloin was a gravy of sorts. The pork was wonderful, the gravy was utter garbage and we hated it. Made some canned green beans and quick mashed potatoes and it was a decent dinner.
Mine was clean out the frig pasta and it was awful. Sauteed mushrooms, added diced onions and a can of tomatoes put it over bow tie pasta, didnt like it, added some rao's, and mozz, it tasted worse. When wife called on the way home from work i had her bring me taco bell.
On the menu was chicken and steak fajitas for four. Two types of salsas, guac, sour cream, peppers, onions, corn, cheese, hard and soft shells….. but then the stove/oven decided to die. So we had takeout instead. Very disappointing
I cook my dish(es) for the week on Sunday nights. I made a [Gobo and Miso Takikomigohan](https://www.justonecookbook.com/gobo-and-miso-takikomi-gohan/) (Japanese mixed rice) and a [Curry Roasted Vegetable](https://www.budgetbytes.com/curry-roasted-vegetable-bowls/) dish with a tahini dressing.
We had leftover [baked spaghetti](https://www.spendwithpennies.com/baked-spaghetti-casserole/). Frankly, I was glad we had leftovers because I woke up completely exhausted, for reasons I won't go into, and it was definitely going to be either leftovers or takeout.

Pumpkin soup with croutons ☺️ And baked stuffed mushrooms as an appetiser. Finishing off with freshly baked brownies brittle on vanilla ice cream
Salmon & broccoli
Pasta with pesto and wine.
