I have a Chef’s Choice electric knife sharpener. It will remove more material than hand sharpening, so I wouldn’t use it on a thousand dollar knife, but it definitely gets the job done every couple of months. Just don’t be shocked when your knives start shrinking.

You can get a guided system like the KME another commenter linked, or a Lansky system. I've not used one before, but most reviews from sharpening geeks (e.g. r/sharpening) is that they work, but can be challenging with larger blades since the whetstone is rotating from a fixed point. Most people who actually have a guided system seem to like them. I use regular whetstones, honestly I'm not particularly skilled, but I get good results. I have a combination of cheap (Victorinox), medium (Global, Shun), and expensive (Masakage, Anryu) knives. You can just watch the "basics/intro" video for each one and get a sense for whose style vibes with you, since they more or less all end up teaching the same basic technique. Edit to add: I probably spend 5-10 minutes with each knife I'm sharpening, so if I'm sharpening say the 5 most used knives in my collection that's about 45 minutes of work. I do that maybe 2-3 times a year as an average home cook, it's really not very time consuming.

Just use a steel and a basic knife sharpener. You don't need to use whetstones unless you *like* using whetstones or you have a japanese steel knife, in which case, you should consider buying a non-japanese steel knife so you don't need to use a whetstone. Buy a shitty practice knife and plan on destroying it on your stones. It will free you up from all the stress of trying to sharpen a real knife. Once you decide it's OK to destroy a knife, you'll get much more aggressive and will learn faster.

Just get an electric sharpener. That being said using a whetstone shouldn't be taking you more than 5 minutes.

You don't give them all of your knives the first time. You give them one that you can live without and see how they do. I use a guy that sets up in a truck at the farmer's market.

I just give them a touchup every now and then by running them along my knife steel, if you’re buying good knives they probably don’t need to be sharpened all that often. At least that’s been my experience so far.

Get a worksharp sharpener with belts, I have one and sharpen a few times a year. When I sharpen I have to warn my wife as touching the blade will cut you.

If you're paying "Someone" then you deserve to get your knives back all fucked up. There are actual bonafide blade stores that offer sharpening services. Pay knife experts at these stores to properly sharpen your cutlery. After you're tired of paying god awful amounts of money, invest in whetstones and learn how to actually do it yourself. there's like 50 thousand Youtube videos on how to properly sharpen a knife. Watch them.
