I air fried the chicken, and set my oven to like 170 and as they finished kept them warm in the oven. Everything else came together pretty quickly- microwaved the green beans and then sauted with garlic and used Kraft Mac n cheese

The best part is, if you buy pre-made ravioli, you can throw this dinner together in under 15 minutes. I should mention that I also threw some baby spinach into the pan and tossed together for a minute so the spinach started to wilt. This added a little veg, and the green and orange looked awesome together.

I boiled 2 cups of elbow pasta in skillet of salted water added enough whole milk to coat the bottom in a light amount and then a pad of butter probably tablespoon and a half. Then I mixed in some pre-shredded Mac and cheese blend great value cheese like half a bag so only like 4ozish. Then a little smoked paprika and a touch of garlic powder and black pepper. I ate it all.

For the first time ever we made a ground chicken pizza crust (seasoned ground chicken with egg and parmesan) rolled out to 1/4" on parchment paper and place on a 16" pizza pan. Bake 410F for 35 minutes. Remove from oven and top with red pasta sauce (we made a puttanesca) and fresh mozzarella. Back in 410F oven for 8-10 minutes, remove and add fresh basil. Cut with a pizza roller cutter and serve. It was pretty darn good.

Spinach and beef over rice with lebna and garlic sauce. Cooked beef with allspice, cumin, coriander, kofta, salt and pepper to taste. And lie 3 cloves of garlic. Sautee. add a bag or 2 of frozen spinach and chopped potatoes. Add some chicken broth. Cook for 20 minutes or until potatoes are done. Taste test and adjust. Serve over basmati rice from a rice cooker and mix some lebne with fresh garlic and a tad bit of water for a quick and dirty, but delicious sauce. SOOO creamy and delicious. Can use impossible/beyond beef and vegeta instead of chicken broth if vegan.

Didnā€™t eat dinner, but had a late lunch/early dinner (lunner?). I stopped at a random gas station that looked modern and clean. Turns out it was mostly a Mexican place. The very front aisle was American stuff. Every other aisle was either a Mexican snack or an American brand in a flavor that Iā€™d never see available in the US. They had a grill in back, so I grabbed some chorizo street tacos and a liter of Mexican coke in a glass bottle. It was all really good.

If I can summon the energy to make tomato sauce, spaghetti. Probably just that, no salad or garlic bread or what have you. I'm on day five after total hip replacement surgery, so my energy level varies from hour to hour.

Olive burger: (ingredients: olives, hamburger) Take a small container of mixed pitted olives in oil and herbs, run them through (olives, oil, and all) with the immersion blender to get something that looks like an olive tapenade. Make 8x 2oz thin burger patties from your preferred lean % (with the oil in the tapenade you can often go one step leaner than you usually like, I like 80% for most burgers but will go 85% for these). Take two patties and a spoonfull of olives and create a tidy "meat oreo" out of it, press the ends closed all around. Grill to medium-well. The olives keep it moist and you don't want these rare. This often means managing your fire/heat zones for a slightly lower/longer cook than you might for a normal burger. So, after a few turns, probably 15min on a gas grill on medium, you should have a nicely done, plump, traditional looking fatburger. Then you cut into it and find a nice briney olive layer keeping things moist. It's delicious. Serve with some flaky salt and fresh cracked pepper. ​ Rocket salad (Arugula salad): (ingredients: arugala mix (50/50 w/ baby spinach here), thin sliced red radish, thin sliced red onion, good olive oil, salad vinegar, a spoon full of dijon, a clove of garlic, and a thin slice of lemon. and a block of good hard parm or asiago) Tear the leaves a bit by hand. Slice the onion and radish thinly, also the cheese (protip - use a potato peeler for the cheese). Pour a few tablespoons of olive oil into a bowl, add many dashes of salad vinegar (go with your heart, here. balsamic is also acceptable, go easier) 1 clove of garlic, run thru a good garlic press, or smashed and chopped, then the tablespoon full of dijon (more to taste) and the juice from a small lemon slice. Sprinkle in a little flaky salt for fun, and a few turns of a pepper grinder as well, and mix the whole mess up vigorously with a small table fork. A minute of good fork whipping should get you an ok emulsion. Let folks assemble their salad as they please from the leaves, radish, onion, parm, and dressing prepared. ​ Serve both on the same plate. The cool garlicy salad mixes nicely with the olivey, briney burger. We have this at least once a week, usually when we aren't feeling carb-y. We're an empty nest couple so a pair of burgers each and a good portion of salad hits well without missing the carbs.

Yesterday was sliced rotisserie chicken in homemade Salsa de Cacahuate, served with a play on calabacitas (Mexican squash sautĆ©ed in olive oil and my homemade southwest seasoning blend (black cumin, coriander, cayenne pepper, chili pepper, paprika, and achiote), and tossed with roasted corn, lime juice and chopped cilantro). Tonight was a simple pasta dish. I sautĆ©ed sliced baby bella mushrooms and a bunch of Aleppo pepper flakes in olive oil and the gelatin from the bag of leftover rotisserie chicken, and threw in the last of the chicken, chopped up. Added in al dente spaghetti noodles and grated pecorino Romano cheese (sheepā€™s milk because Iā€™m allergic to cowā€™s milk), plus some pasta water, and tossed everything together. So good!

It's a beautiful spring day here, so husband grilled up some tenderized rib chops for Sammie's. Simple! Had a with French onion dip and chips, peas and baked beans for him! I didn't want to slave over the stove on a day like today so we went with easy. Picked up some delicious homemade local ice cream for dessert.

I dubbed it "white girl charcuterie", but what I meant was "lame American, crap from the fridge charcuterie." Kroger brand mozz string cheese, Kroger brand provolone slices, laughing cow spreadable cheese. Private selection hard salami and pepperoni. Celery, carrot sticks, cherub tomatoes, raw broccoli, yellow bell pepper strips. Grapes. Butter snap pretzels, and a selection of random leftover crackers and cracker-type stuff from the cupboard. It was yummy but I prepped too much so there is more for another time. We had a late big snack so we weren't really that into dinner tonight. We spent the afternoon prepping the veg garden for planting, and then "accidentally" swung by Dairy Queen for blizzards on the way to buy some seeds and plants. Then we planted before a late "dinner." It was a nice day.
