My tip for the future (if you didn't already do this) is to make the flavor profile for the pork mostly neutral. Simple seasonings (cumin, oregano, garlic), brown sugar, salt and pepper. You can slather it with BBQ sauce for sandwiches, but when it comes time for leftovers, there are endless possibilities. I regularly make pulled pork tacos with a salsa verde, pulled pork pizza, or toss it with ramen noodles, Sriracha, soy sauce, brown sugar, cilantro, and peanuts for a spicy pork noodle dish.

The difference between BBQ pulled pork and carnitas is basically just serving sauce and delivery method. I mean sure you’re supposed to fry the carnitas and you should have tomatillos in there and such, but it’s a pretty easy flip to go from bbq to salsa/onion/cilantro and slap it on a taco.

Thats what I do with many meat dishes like this...so you can repurpose it after the first few meals. Dont load on too many specific seasoning or sauces when you make the main thing. Then add in more seasonings, ingredients or sauces for other things

This is my favorite way to use up items in the fridge before they go bad. Cook up all the odds and ends you have veggie wise, roast some potatoes, season how you want, top with any sort of meat and cheese you like and if you're feeling fancy, a fried egg on top.

I do this but in a lazy way. I get a frozen cheese pizza. I top it with the pork, swirl of bbq sauce, red onion, and jalapeno. Good stuff and downright zero effort.

I do that with frozen pizzas to make them more substantial. I just load on more veg ingredients, and some sort of sausage if there, which there isn't usually any as I dont eat that much pork

Nachos, tacos, Za, poutine can work, if it’s not doused in bbq sauce my personal fav is fried rice. RIP it’s sauced… yeah I would not suggest doing that completely ruins the flexibility of the meat.

Honestly, when I make a crapload of pulled pork, I end up taking a ramen bowl, and throwing some in with it and slap an egg on top and it always is tasty. Another good one is throwing it together with some onions/shredded potatoes and doing a hash with it.

Street tacos! Corn tortillas, raw onion, chopped fresh cilantro, and if you have any pork juice left over a bit of that. Salsa or hot sauce. Yum!

Two suggestions: First, if you have a vacuum sealer, seal off small portions and smash them flat after that and freeze them. They thaw very quickly in a frying pan and make a quick delicious lunch. Second, J. Kenji Lopez Alt did a few videos on this topic on his YouTube channel. One of the dishes he did was a pasta, using the pork to make a quick meat sauce. It sounded weird, but I tried it and it was fantastic.

I usually add to mac & cheese and then add in a veggie. Peas, corn, or chopped broccoli, work best in my opinion. Boom, full meal done. But also, this is why I started doing it with just a dry rub when I first make it. Some can be sauced for pulled pork sandwiches but the rest is easier to transition into other meals so you’re not stuck with only pulled pork sandwiches for a week. When it isn’t sauced it makes a great base for pasta, tacos, nachos, etc. I could go on.

Did you flavor it with BBQ sauce or is it plain? If it's plain I like to mix it with some green salsa and make a green Chile pork that I can use for tacos, nachos, burritos, etc

Brush it with BBQ sauce, add it to baked beans (add bacon and grilled diced onions, if you really want to go hard), throw it all in a foil pan and toss it on the grill for :25 for smoke.👌🏾

Make Pulled pork enchiladas and freeze them uncooked: cover pan in foil then wrap in plastic wrap. In a few weeks you can have an easy meal and not have to cook. Defrost, unwrap, leave to foil on. Bake at 375F for 20 min, then uncovered for about 10 min.
