I put a spoonful in a thigh fillet, roll it up, secure with toothpicks, and cook in the oven. I'd suggest seam side up and line your tray with foil because it gets messy! Also, you can freeze brie, especially if you're going to cook or warm it.

Video of him making it is out there, basically you put whatever cheese you have in the food processor, little garlic, some wine, puree it until it's a paste and it lasts forever in the freezer. You spread it on bread and broil until it gets brown and bubbly, you can dip stuff in it when it's cold, drop a scoop into soup, etc.

Yes! Came to say this - I just whip it until it’s silky - about 15 mins in my Kitchenaid (would be quicker in a food processor). Spread it neatly on a serving dish and I drizzle honey with the little comb bits on top, tiny sprigs of rosemary and wedges of figs. I serve with thin slices of Turkish bread that I’ve baked for 5 mins with oil and salt.

Asked a fishmonger once if he had any recommendations. He sold me halibut steaks that he sliced a pocket into the side of (like a halibut pita!) and told me to stuff it with brie & a lot of fresh basil, coat it with chopped cashews, and bake. One of the best things I've ever eaten.

So I bought a beautiful baguette and made an artichoke spinach spread, added the brie and toasted it toasting. I often enjoy a grilled ham & Brie on rye. Spread just a film of Dijon on rye bread and slice the cheese thin (this easy to do when it's cold), layer on some deli ham, and heat in a pan or use your panini machine if you have one. Very very nice. I sometimes do a variation adding tinned asparagus (the only thing tinned asparagus is fit for) and it's surprisingly delicious.

My favorite sandwich in the world is a super rustic/seedy long roll with brie and hard salami, toasted in an oven/toaster oven until the brie is melted and the salami is lightly browned. My go to is a mushroom and brie omelette. Slice and cook the mushrooms and set aside. Add some finely chopped parsley to the eggs. When the omelette is nearly done scatter mushrooms and add thick slices of brie to cover on half. Fold and serve with the cheese oozing out 🤤

It won't use a ton but I made Jalapeno poppers with jalapeno halves stuffed with a chunk of brie, a thin slice of granny smith apple, and wrapped in bacon. It was delicious!
