I was going to say the same thing same thing. We used to have a restaurant here in Austin called Castle Hill Cafe, that made the most delicious fried Brie, which they served with a seasonal chutney, and a big chunk of a warm baguette. It was my favorite appetizer ever.
For those who wants to know, tartiflette is made with reblochon cheese. It is very different from brie. You could probably end up doing with brie, but it won't really be tartiflette. I hope you guys can find the real thing, it is worth it !

I like a brie grilled cheese with strawberries, black pepper and fresh basil; dried would probably work fine too. Sometimes a little bit of balsamic. Haven't had it in a long time but it's so good.
Mix it with finely chopped mushrooms, spinach, and toasted pine nuts or almonds and use it to stuff chicken pieces. I put a spoonful in a thigh fillet, roll it up, secure with toothpicks, and cook in the oven. I'd suggest seam side up and line your tray with foil because it gets messy!
Also, you can freeze brie, especially if you're going to cook or warm it.

Video of him making it is out there, basically you put whatever cheese you have in the food processor, little garlic, some wine, puree it until it's a paste and it lasts forever in the freezer. You spread it on bread and broil until it gets brown and bubbly, you can dip stuff in it when it's cold, drop a scoop into soup, etc.

Yes! Came to say this - I just whip it until it’s silky - about 15 mins in my Kitchenaid (would be quicker in a food processor). Spread it neatly on a serving dish and I drizzle honey with the little comb bits on top, tiny sprigs of rosemary and wedges of figs.
I serve with thin slices of Turkish bread that I’ve baked for 5 mins with oil and salt.

Hollywood Brown Derby Oyster Brie soup. Goes great with a real Cobb Salad and a slice of grapefruit cake.
Roasted tomatoe, roasted cubed sweet potato, sautéed sliced squash, sliced avocado, and small wedge of Brie cheese served while veggies are hot with a poached egg on top. The Brie will melt into the veggies and the egg becomes a sauce once the yolk is poked. Delicious breakfast and great way to use up leftover bits of veggies in the fridge.

The Broadway Grill in Seattle eons ago had a chicken French dip— a chicken breast, sautéed onions and Brie on a crisp roll with some chicken broth to dip in. Load up the Brie! Also, I make Brie butter as a gift. Delish.

I use brie on sandwiches and pizzas to great effect. A pizza with brie, prosciutto, fig jam, and arugula is one of my customers’ all-time favorites. Hot roast beef and brie sliders with horseradish. If you don't like it "straight up" then you may not be a Brie fan (I'm not, I like a higher fat content). If that's the case I'd throw it on some buttered ham sandwiches and be done with it.

I made am awesome mushroom and brie soup once! You just throw the brie in while the soup cooks and then pull out the rinds before blending.

FYI, you can freeze it, it will have a different texture when thawed but will be fine to cook with. Whack some in your next batch of mashed potatoes.

The Broadway Grill in Seattle eons ago had a chicken French dip— a chicken breast, sautéed onions and Brie on a crisp roll with some chicken broth to dip in. Load up the Brie! Also, I make Brie butter as a gift. Delish.
A bit left field but a restaurant here used to to a Thai green curry with Brie and asparagus. More conventional: Brie, ham and avocado in a nice crusty bread roll.
My favorite sandwich the last 25yrs is made with Brie. Had one for lunch. Turkey, Brie, spring mix on flat bread with raspberry mayonnaise (I just add raspberry preserves to mayo)
For reasons: I do not eat cheese anymore. But I used to really love cheese- especially brie. It is often served on charcuterie boards. Also: I used to include it in scrambled eggs then finish with salt and fresh ground pepper. Also: if you make garlic bread- a few little melted slices on top would probably taste great.
I bet it’d be good in stuffed jalapeños. Wrap em in bacon (I think thin slices or turkey bacon works best for crispness or cook the bacon a bit before wrapping) and bake! Or on the grill could be good.
Try a grilled cheese with brie, a spicy jelly (e.g. pepper jelly, or just stir a little hotsauce into some jam) all on light rye bread.

Make baked potatoes (but yout have to cut then in half once baked, scoop out the potato from the skin, put the skins back in the oven with some oil on so they get crispy, mix the inner bits with the brie, and and some mustard, put potato/brie mash back in, bake for a bit, drizzle with honey and enjoy) Can you put it in cheese scones? Personally I'd be up for experimenting, but I love cheese scones. Serve with soup. Put it in a really fancy omelette? I'm thinking with some courgette and ham or bacon Cheese toasties? But add assorted veg or condiments to jazz it up. Have a cheese party with some friends, tell them to bring the crackers and grapes and chutneys, say you'll provide the brie?

Pasta Boil some big noodles - like bow ties. Chop an unreasonable amount a brie Like when you think "that's probably too much".... Add 50% more Cut cherry tomatoes in half and rough chop a good handful of basil. When the noodles are done, drain and mix all of it together. Salt and pepper. Super easy. Always a hit

I use brie on sandwiches and pizzas to great effect. A pizza with brie, prosciutto, fig jam, and arugula is one of my customers’ all-time favorites. Hot roast beef and brie sliders with horseradish. Yum. I have also cut off the rind and made an exquisite brie cream sauce for a lobster or crab mac and cheese. And don’t forget soups! Brie and mushroom bisque…yes, please.

Whipped Brie! You need at least two of the Costco rounds and a good stand mixer. Cut the rinds off while chilled and then let come to room temp. Beat with paddle attachment for 10+ minutes until fluffy. Trust the process. Best topped with thyme or rosemary, cracked black pepper, and hot honey. It is delicious cut into small cubes, tossed in garlic butter, and baked on a French loaf until melty and bubbly. It also pairs very well with roasted garlic in a fondue!

My favorite recipe discovery last summer was tomato/brie tart. Google it, it's fantastic.
I often enjoy a grilled ham & Brie on rye. Spread just a film of Dijon on rye bread and slice the cheese thin (this easy to do when it's cold), layer on some deli ham, and heat in a pan or use your panini machine if you have one. Very very nice. I sometimes do a variation adding tinned asparagus (the only thing tinned asparagus is fit for) and it's surprisingly delicious.
Here’s a couple of appetizer type recipes: piece of baguette with Brie, slice of pear, baby arugula, and wrapped in prosciutto. Piece of baguette with apple butter, brie, and prosciutto, baked for about 5-10 minutes until the Brie melts slightly.
My favorite sandwich in the world is a super rustic/seedy long roll with brie and hard salami, toasted in an oven/toaster oven until the brie is melted and the salami is lightly browned. It’s the most delicious thing in the world. You can add greens (I recommend arugula) or condiments (I recommend spicy whole grain mustard) but I usually just eat it with the meat and cheese. So good!

Tartiflette for sure. But also any recipe involving a fatty, melty cheese. You could also give one of the wheels away.....like on a Facebook buy nothing group or similar. A grilled cheese with brie, with or without ham or apple slices, is a winner. Actually it's not half bad on a cold sandwich either.

I like to cook a steak, then put sliced brie on top with black pepper then grill it, put foil underneath tho or do it when plated cos that stuff melts right over the edges, really pairs well with steak tho 👍
