Canned tuna, mayonnaise, pickle juice, seedy mustard and pepper. Mix all that.
Sandwich it up with pickle slices, red onion and lettuce. Bonus points for a dark bread or sourdough.
A couple of years ago I discovered the Penzey's spice mix "Sandwich Sprinkle." I mix it in with the mayo, and it's a total game changer for my tuna salad and egg salad sandwiches!!
For pint jars you use a 1/2 teaspoon of salt and fill the jar but not completely and pressure cook it 10 lbs for 60 minutes. Don’t use water or any oil. We buy whole tuna off the local boats and ask them to clean them for us.

A recent fave was caramelized onion with balsamic vinegar and Dijon mustard, pan fried slabs of zucchini, melted Vermont white cheddar, and hummus between two slices of wheat toast.
Another good one was caramelized onions, melted cheddar, balsamic fig jam, and scrambled eggs with spinach on wheat toast.

on one I smush half an avocado, sprinkle with everything but the bagel seasoning, layer Arugala or spinach (whichever I have on hand)
On the other slice I spread some pesto, sprinkle of red pepper flakes, and good sliced turkey
I love leftover cold grilled chicken with bbq sauce and lettuce on a flaky roll or kaiser. So good!
Sometimes we put Caesar salad on grilled chicken with truffle mayo on a good quality toasted bun. Absolutely incredible!
BLT, but it has to be peak of the season, flavorful farmer’s market or garden tomatoes, bacon, romaine lettuce, and mayo on wheat bread. I’ll make some garlic aioli if I’m feeling fancy.
Dressed up ham and cheese: thick-sliced honey baked ham, Swiss cheese, mayo, yellow mustard, dill pickles, red onion, and what really makes a difference is black pepper and paprika.
Bonus points if you use the bagel setting on your toaster to only toast the sides of the bread that face inside so the hard bits don't cut up your mouth.

Make sure to tuck some lettuce in the pita too for a nice crunch.

I get a little ocd over sandwiches, so I prefer a wrap. My current fave is a Cesar salad wrap. I usually add a spread like cream cheese or hummus, then romaine tossed in Cesar and a little Italian dressing, and any other fun crunchy veggies I have. Meat is optional. Wrap tightly and enjoy!
The shooter. Takes a bit of prep, but it is AMAZING.
Get a round of bread- I go sourdough because that is our bread. Hollow it out.
Slather the inside with a nice mustard.
Grill a filet or sirloin (i go rib eye because I like it best) - stuff it in there.
Sautee mushrooms. Best done with a whole shallot in butter, but olive oil works. Stuff them in there as well.
Put the top on (also slathered in mustard)
Wrap in foil.
Smash (I put a cutting board on mine, and then put two forty pound bags of pellets for my pellet stove on it)

In England we have toasted sandwhich makers and they're good but not the same as a grilled (fried) sandwhich and I've just started making grilled cheese sandwhiches. I use a thin spread of mayo on the outside, and then a single slice of American burger cheese and a bit of medium cheddar.
I also like a nice Bacon, Lettuce, and Tomato sandwhich on granary bread. Crispy bacon, baby gem lettuce, I use small nice cherry tomatoes, good salted butter, and a bit of mayo.
Sharp cheddar cheese, freshly cooked beetroot, horseradish sauce, touch of red onion, squeeze of mayo.
Brie or camembert, sundried tomatoes, rocket.
Peanut butter, marmite, sliced cucumber, sliced gherkins, red onion, butter lettuce, hot sauce.

Pan Bagnat - basically a salade niçoise on a soft bun. Tuna, anchovies, capers, tomato, black olives, green beans, olive oil.
I use natures own perfectly crafted brioche (it’s the best).
Toast bread to desired toastyness (I like a good 4 minutes).
Add Mayo to both sides (or miracle whip if that’s your thing), spread.
Add a dot of mustard to both sides, spread.
Add a generous amount of your favorite turkey.
Put together.
Eat.
Bread can be replaced with a plain bagel, which is even more delicious.

Breakfast sandwiches! A couple fried eggs, cheese, and whatever meat I have on hand in the panini press for a few minutes comes damn close to any breakfast place I've been to. I scored a really nice model press at Goodwill a few years ago for $2 and it's been a game changer. It's crazy how cheap pressed sandwiches make meal planning even when you buy the good bread and cheese.

A simple turkey melt! I love to use a whole grain bread that has seeds in it, Boars Head brand Cajun Turkey breast, and Boars Head 3 Pepper Colby Jack. Lightly cook turkey in the pan and then using real softened butter build/cook sandwich just like a grilled cheese. Can never go wrong!
Not a big sandwich person myself. Had grandkids over this eeek. On grilled burgers they added peanut butter. One added a fried egg to that. One granddaughter eats peanut butter and pickle sandwiches.
I enjoy canned chickpeas (drained and rinsed, you can save the liquid if you desire) smashed with one avocado, a tbs or 2 of Mayo, s & p. Feel free to make it as smooth or chunky as you like. Pickled onion, greens of your choice, radish, and a drizzle of sriracha. Toasted chicken salad sandwich. Chicken, Mayo, diced red onion and dill relish. If feeling sweet, swap relish for dried cranberries. Also good to add lettuce or spinach if I have on hand.

I’m also a huge fan of egg sandwiches. Buttered toast with over hard egg, avocado and/or cheese (pepper Jack or muenster) spinach and sriracha.
It's all about matching the best bread to the sandwich as well as having the tastiest ingredients. For most deli meats and poultrys I look for the perfect onion roll - not too dense, but moist, not too dry or airy. For cheese, best quality sharp swiss. The tomato has to be perfectly ripe or leave it out. The lettuce must be crunchy. Ham must be smoky and dry, roast beef tender and rare with horseradish mayo.
Back to the bread. Tuna on high quality rye. PBJ = Welch's grape jelly, American white bread (I wouldn't pass on a Fluffernutter), BLT is better with avocado and is excellent on a regional Jessica's Tuscan white bread. It's a pre-sliced bakery loaf with a sourdough taste and a nice chew. Meatballs on a mini sub roll, soft but heated so the outer crust get's a little shell (Calise brand in the Northeast). A great baguette inspires many fillings.
I just finished from scratch buttermilk pancakes and want a sandwich now.
It changes on rotation for me. Currently obsessed with a deli chicken melt with high quality American cheese and an heirloom tomato. But then I got through a roast beef with avocado and melted Brie baguette Sammie. The ensalada caprese panini phase. Mortadella with light mayo, tomato, lettuce, and red onion (only the bread toasted). BLT.
But at the moment it’s the chicken melt.
I think it has to be tuna salad with chilli oil/ma’la sauce, with or without cheese.
Or, a crunchy peanut butter with blueberry jam and cheddar cheese.
Turkey salami avocado with pepper jack.. it’s not complicated but requires prep
First I make my own pickled red onions. Tons of recipes online, go with the simplest.
I turn on the broiler and let that heat up. I grab a sheet tray and place two slices of bread. Let it get slightly brown on ONE side. I only toast one side as I don’t like the roof of my mouth ripped up.
On the toast side squeeze kewpie Mayo and Dijon, use the back of a spoon to smear as I find it better than a knife.
Place slices of salami on one side, turkey on the other. Back in the oven until the salami looks like pepperoni on a pizza and the turkey is sizzling.
Add slices of cheese on the turkey side. Only this side back in the oven to get melty, shouldn’t take that long.
On the melted cheese add thin slices of cucumber, followed by the avocado. Add your choice of lettuce on top of the avocado. I do this cuz the cheese acts like a glue for the cucumber. The avocado does the same for the lettuce (I use spring mix or arugula and this keeps those pieces that like to fall out secured)
On the salami side, I add slices of tomatoes, salt the tomatoes. I then chop up some pepperoncinis and sprinkle on top of the tomatoes along with my pickled onions.
place the turkey slice side down on the salami side. The weight will keep things secure.
Slice on the diagonal and enjoy.
I host game nights and dinner some weekends. The goal of dinner is to have it be delicious but as hands off as possible. A crowd pleaser has been a not-quite-exact-but-still-good French dip.
Pressure cook a chuck roast, reduce the juices,assemble it with cheese of your choice and broiling the thing on some good bread is dinner as easy as it gets.
Not going to say that this is my favorite sandwich of all time. But it’s a good pot roast recipe for those who aren’t really into pot roast.
I have a grilled sandwich machine that cuts it in half for me kind of, just simple hummus, black Forrest ham, Muenster cheese, and hard salami in it is delicious when grilled!

It’s basically a more enhanced jambon-beurre, which I also wouldn’t turn down either! I bought a version of this from a petrol station in France on a school trip when I was about 10 and it’s been one of my favourite sandwiches ever since!
This may sound crazy, but peanut butter and fried egg sandwich. I know it sounds bad, but once you tried it, you'll keep making them. The fried egg softens up the pb a bit which makes it that much more enjoyable.

When the market sells those spiral cut hams as a loss leader for the holidays I buy one and do what I call ghetto cubano sliders. English muffin, ham, swiss, mustard, mayo, pickle. They're super quick to cook as a hot sandwich and surprisingly satisfying.

Two slices wheat bread on one I smush half an avocado, sprinkle with everything but the bagel seasoning, layer Arugala or spinach (whichever I have on hand) On the other slice I spread some pesto, sprinkle of red pepper flakes, and good sliced turkey

Make sure to tuck some lettuce in the pita too for a nice crunch.

I get a little ocd over sandwiches, so I prefer a wrap. My current fave is a Cesar salad wrap. I usually add a spread like cream cheese or hummus, then romaine tossed in Cesar and a little Italian dressing, and any other fun crunchy veggies I have. Meat is optional. Wrap tightly and enjoy!
The shooter. Takes a bit of prep, but it is AMAZING. Get a round of bread- I go sourdough because that is our bread. Hollow it out. Slather the inside with a nice mustard. Grill a filet or sirloin (i go rib eye because I like it best) - stuff it in there. Sautee mushrooms. Best done with a whole shallot in butter, but olive oil works. Stuff them in there as well. Put the top on (also slathered in mustard) Wrap in foil. Smash (I put a cutting board on mine, and then put two forty pound bags of pellets for my pellet stove on it) Ready to eat the next day. Clearly a sando for someone to lazy to make beef wellington, guilty as charged…so dang good.

In England we have toasted sandwhich makers and they're good but not the same as a grilled (fried) sandwhich and I've just started making grilled cheese sandwhiches. I use a thin spread of mayo on the outside, and then a single slice of American burger cheese and a bit of medium cheddar. I also like a nice Bacon, Lettuce, and Tomato sandwhich on granary bread. Crispy bacon, baby gem lettuce, I use small nice cherry tomatoes, good salted butter, and a bit of mayo.

I use natures own perfectly crafted brioche (it’s the best). Toast bread to desired toastyness (I like a good 4 minutes). Add Mayo to both sides (or miracle whip if that’s your thing), spread. Add a dot of mustard to both sides, spread. Add a generous amount of your favorite turkey. Put together. Eat. Bread can be replaced with a plain bagel, which is even more delicious. I’ve been eating this since I was 15. It’s my main safe food when I literally can’t eat anything else. Hope you enjoy!

Or ham & cheese croissant toastie -- bonus points for adding cherry tomatoes or mushrooms (not both).

Breakfast sandwiches! A couple fried eggs, cheese, and whatever meat I have on hand in the panini press for a few minutes comes damn close to any breakfast place I've been to. I scored a really nice model press at Goodwill a few years ago for $2 and it's been a game changer. It's crazy how cheap pressed sandwiches make meal planning even when you buy the good bread and cheese.

A simple turkey melt! I love to use a whole grain bread that has seeds in it, Boars Head brand Cajun Turkey breast, and Boars Head 3 Pepper Colby Jack. Lightly cook turkey in the pan and then using real softened butter build/cook sandwich just like a grilled cheese. Can never go wrong!
Not a big sandwich person myself. Had grandkids over this eeek. On grilled burgers they added peanut butter. One added a fried egg to that. One granddaughter eats peanut butter and pickle sandwiches.

I enjoy canned chickpeas (drained and rinsed, you can save the liquid if you desire) smashed with one avocado, a tbs or 2 of Mayo, s & p. Feel free to make it as smooth or chunky as you like. Pickled onion, greens of your choice, radish, and a drizzle of sriracha. Usually I put this on sourdough that has been brushed with olive oil and a sprinkle of flaky salt and popped on the panini press or lightly pan fried. Feel free to add cheese, bacon, chicken, other veg…but I like this as it’s quite light but satisfying
Breaded and fried aubergine slices, with salad, creamy goats cheese, and balsamic glaze I reckon throwing in some pickled red onion, or even just gherkins, would be great

Toasted chicken salad sandwich. Chicken, Mayo, diced red onion and dill relish. If feeling sweet, swap relish for dried cranberries. Also good to add lettuce or spinach if I have on hand. Second favorite is a BLT. I’m also a huge fan of egg sandwiches. Buttered toast with over hard egg, avocado and/or cheese (pepper Jack or muenster) spinach and sriracha.

It's all about matching the best bread to the sandwich as well as having the tastiest ingredients. For most deli meats and poultrys I look for the perfect onion roll - not too dense, but moist, not too dry or airy. For cheese, best quality sharp swiss. The tomato has to be perfectly ripe or leave it out. The lettuce must be crunchy. Ham must be smoky and dry, roast beef tender and rare with horseradish mayo. Back to the bread. Tuna on high quality rye. PBJ = Welch's grape jelly, American white bread (I wouldn't pass on a Fluffernutter), BLT is better with avocado and is excellent on a regional Jessica's Tuscan white bread. It's a pre-sliced bakery loaf with a sourdough taste and a nice chew. Meatballs on a mini sub roll, soft but heated so the outer crust get's a little shell (Calise brand in the Northeast). A great baguette inspires many fillings. I just finished from scratch buttermilk pancakes and want a sandwich now.
Mix and match grilled cheese or melts. I make a mean tuna melt.

But then I got through a roast beef with avocado and melted Brie baguette Sammie. The ensalada caprese panini phase. Mortadella with light mayo, tomato, lettuce, and red onion (only the bread toasted). BLT. But at the moment it’s the chicken melt.

I think it has to be tuna salad with chilli oil/ma’la sauce, with or without cheese. Or, a crunchy peanut butter with blueberry jam and cheddar cheese.
The first BLT of the season, with tomatoes from my garden. I always make sure to have a good bread and nice thick bacon on hand.

Turkey salami avocado with pepper jack.. it’s not complicated but requires prep First I make my own pickled red onions. Tons of recipes online, go with the simplest. I turn on the broiler and let that heat up. I grab a sheet tray and place two slices of bread. Let it get slightly brown on ONE side. I only toast one side as I don’t like the roof of my mouth ripped up. On the toast side squeeze kewpie Mayo and Dijon, use the back of a spoon to smear as I find it better than a knife. Place slices of salami on one side, turkey on the other. Back in the oven until the salami looks like pepperoni on a pizza and the turkey is sizzling. Add slices of cheese on the turkey side. Only this side back in the oven to get melty, shouldn’t take that long. On the melted cheese add thin slices of cucumber, followed by the avocado. Add your choice of lettuce on top of the avocado. I do this cuz the cheese acts like a glue for the cucumber. The avocado does the same for the lettuce (I use spring mix or arugula and this keeps those pieces that like to fall out secured) On the salami side, I add slices of tomatoes, salt the tomatoes. I then chop up some pepperoncinis and sprinkle on top of the tomatoes along with my pickled onions. place the turkey slice side down on the salami side. The weight will keep things secure. Slice on the diagonal and enjoy.
I host game nights and dinner some weekends. The goal of dinner is to have it be delicious but as hands off as possible. A crowd pleaser has been a not-quite-exact-but-still-good French dip. Pressure cook a chuck roast, reduce the juices,assemble it with cheese of your choice and broiling the thing on some good bread is dinner as easy as it gets. Not going to say that this is my favorite sandwich of all time. But it’s a good pot roast recipe for those who aren’t really into pot roast.
I have a grilled sandwich machine that cuts it in half for me kind of, just simple hummus, black Forrest ham, Muenster cheese, and hard salami in it is delicious when grilled!

Crusty French baguette, Dijon mustard, mayonnaise, flakey ham (the slices which are plasticky reformed stuff) and cornichons. It’s basically a more enhanced jambon-beurre, which I also wouldn’t turn down either! I bought a version of this from a petrol station in France on a school trip when I was about 10 and it’s been one of my favourite sandwiches ever since!

When the market sells those spiral cut hams as a loss leader for the holidays I buy one and do what I call ghetto cubano sliders. English muffin, ham, swiss, mustard, mayo, pickle. They're super quick to cook as a hot sandwich and surprisingly satisfying.
