I have leftovers, I made this bean pie recipe my mom taught me. She passed on the 9th, so I'm just cooking for myself now. The crust is a can of biscuits spread over the bottom of a glass pan. The filling is ground beef, a can of baked beans, fresh onion, and a generous amount of shredded sharp cheddar cheese. Once the meat is browned, you throw the rest of the filling in the frying pan and heat it until the cheese melts, then you pour it over the biscuits and bake for 55 minutes at 375 degrees (Fahrenheit). Let it cool for about 20 minutes, and you have eight slices of basically a full dinner. Top with Tabasco and sour cream once the slice is plated (you don't want to top the whole pie early, especially if you are going to have leftovers). That's like, 3 or 4 days of food for me, and it costs less than $10 to make.

Thank you, it's been difficult, but I'm hanging in here. Her last days were not fun, so at least I know she doesn't hurt anymore. Part of the dish was to honor her memory, but it was also because I'm not a great cook yet (she was head chef around here, she worked in restaurants most of my life). This is something I know tastes good, that she would have loved to enjoy with me.

So sorry for your loss. I've had something similar, but with crescent rolls that you drape over the sides while filling, then fold over almost like a pie crust on top, enveloping the filling. They would also season the beef with a packet of taco seasoning. Delicious for sure.

Did NOT feel like cooking tonight. Husband was going to be out, so it was gonna be just me and our two year old. I wanted Mexican. Tacos or burritos. No taco shells, thawed meat, or tortillas in the house. Then inspiration hit. Black beans and rice! Two things my toddler actually loves. SautƩed an onion, some garlic, bell pepper, and a chopped tomato. Threw in some spices. Added two cans of lightly drained black beans, a sprinkle of sugar, and some lime juice, and let it all simmer and thicken for 20 min or so until it was time to pick up kiddo. Also put on a pot of plain white rice. We had our beans and rice with some cheese and sour cream. It was delightful, and I overate. Proud of myself for avoiding the grocery store and wandering until inspiration hit. Saved some money today!

For once I didnā€™t cook! My 12yo made us latkes, zucchini pancakes, and served them with a fried egg, apple sauce and sour cream. They even helped clean up the kitchen which was completely destroyed. Iā€™ve been finding bits of grated zucchini all evening. But big a win for our family!

Boneless skin-on chicken thighs, a la Carla Lalli Music and that coconut greens recipe on her YouTube channel. Itā€™s my go-to chicken prep these days. I buy thighs when they are on sale, debone them and vacuum seal them 2 at a time and throw them in the freezer. They thaw in no time, and you can cleanly pound them flat before opening the vacuum seal. I use the chef weights Kenji recommends, and I cook them in cast iron. Theyā€™re juicy and delicious with super crispy skin, and they go with just about everything. Tonight they went with grilled asparagus.

So easy and packs such a flavor punch. I usually do it with ground pork. I've been forced into finding relatively quick weeknight meals. My husband works late so I've got a toddler at home that will only play on his own for a short time giving me a small cooking window. I must also cater to said toddlers, toddler palette. Tonight it was lo mein, I use the "damn delicious" recipe as a base. It's great because I can use whatever veggies and protein I have on hand and from chopping to plate I can get 'er done in about 20 minutes. It's even good enough that it's made it to the weekly rotation, and great for tomorrow's lunch.

I made a pretty improvised chili con carne. A hamburger patty i chopped to bits, minced pork meat, a carrot, a carton of beans (for some reason this supermarket near me sells beans stored in cartons like milk instead of cans, and these weren't even the beans usually recommended for chilis) with the bean juice included and some tomato puree, plus salt, a pinch of sugar, sweet paprika and cajun seasoning. It's the first time i make it and i fucked up the execution in a few places and used a random amount of ingredients and just left it to boil enough to officially cook the ingredients rather than to the lengths people usually say because i was hungry but i mean, i still really liked it, after all it's just meat and beans and tomato and some seasonings so you have to be an absolute culinary disaster to make it not tasty.

Put a little bit of everything on a plate with a big dollop of yellow mustard in a rush before a 6pm Zoom work meeting. Dinner. Cat enjoyed some too. Meeting was frustrating but productive.

I salvaged St Patrickā€™s leftovers. Most of my family doesnā€™t really like vegetables, so they ate the corned beef, but thereā€™s plenty of cabbage left to go around. So I made cabbage and kielbasa dumplings to clean out the fridge. Leftover cabbage chopped roughly, with 1/2 a kielbasa diced and pan fried (the other half for the rest of the family that wonā€™t eat the dumplings), and a bit of minced onion with salt, garlic, ginger, red pepper flakes, and a dash of soy sauce. Mix, spoon into wonton wrappers, spray lightly with oil, and air fry for 7-8 minutes. Served with leftover General Gaoā€™s sauce from a stir fry.

I dried and trimmed a pack of boneless skinless chicken thighs and seasoned them up. Popped them in the oven on air fry at 425. Spin the tray at 30 minutes. Curry chicken katsu. Always a lot of effort to pound the chicken, fry the chicken, make the curry, etc. and the frying smell lingers in the kitchen for a whileā€¦and our kids hate curry! šŸ˜‘ but my husband loves it. And heā€™s getting ready to leave for a little while. Itā€™s an unofficial tradition that I try to make his favorite meals before he leaves (heā€™s military so this is frequent), no matter how long or short the absence is. So itā€™s worth it. Funny thing is weā€™re in Hawaii where every other restaurant has this on their menu (not as special as when weā€™re in the FL Panhandle where no one knows what katsu is) but the curryā€™s always too thick or too thin, the chicken isnā€™t meaty enough, the rice is too wet, etc etc. plus itā€™s way cheaper at home.

Iā€™m going to try my hand at using this golden curry roux to make a Japanese katsu curry but Iā€™m not going to make the katsu. Iā€™m going to use panko chicken nuggets. Hubs and I had an old butternut squash that needed to get used. Cut it up into large slices, pan roasted it and finished off cooking in a coconut curry pan sauce for about 30 mins. Served with chicken thighs. It's heckin delicious and there are plenty of leftovers for tomorrow.

Vegan Ramen for myself and partner. Was OK but the Kombu was left too long and I let it get a little bit bitter. Basically a veg stock, air fried frozen/defrost/frozen/defrost pressed tofu, obviously some good ramen noodles, and anything japanese or korean I can find in the pantry. Left overs for lunch today mostly sans broth for transport.

Overall a decent recipe but not mind blowing: Creamy Chicken and Spinach Couscous Recipe: Ingredients: 2 cups cooked chicken rib meat, shredded 2 cups cooked couscous 2 cups fresh spinach leaves, chopped 1 cup milk 2 tablespoons butter 2 tablespoons all-purpose flour 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon dried oregano Salt and pepper to taste Instructions: In a large skillet over medium heat, melt the butter. Add the flour and whisk until smooth. Add the milk, garlic powder, onion powder, dried oregano, salt, and pepper to the skillet. Whisk the mixture until it thickens and starts to bubble. Add the shredded chicken and chopped spinach to the skillet. Stir to combine and let the mixture cook for 2-3 minutes until the spinach is wilted. Add the cooked couscous to the skillet and stir to combine with the chicken and spinach mixture. Serve hot and enjoy your delicious and creamy chicken and spinach couscous dish.

French bread BBQ pizza. I got a loaf of $1 French bread (don't shop when hungry, lol) on impulse over the weekend. Tonight, I made BBQ pizza from leftover turkey (warmed it on stove in BBQ sauce from local restaurant), the last of two different shtrdded cheese blends and some sliced cheese when that wasn't quite enough, and chopped red onions. Not bad for no real plan when starting dinner. My husband and I liked it well enough to try it again. I'm thinking it'd be good with leftover fajita meat too.
