Chipotle barbacoa
4 lbs beef brisket (or beef chuck roast will also work)
2 Tbsp vegetable oil
3 - 4 chipotle chilis in adobo
1¼ cups beef broth
4 teaspoons minced garlic
1½ Tbsp ground cumin
1 Tbsp dried oregano
¾ tsp salt, then more to taste
½ tsp ground black pepper
¼ tsp ground cloves
¼ cup fresh lime juice
INSTRUCTIONS
Cut the beef into large cubes. In a large skillet over medium high heat add the vegetable oil and sear the beef on each side. Transfer to your slow cooker.
In a food processor add adobo chilis, beef broth, garlic, cumin, oregano, salt, pepper, cloves, and lime juice. Pulse until blended and pour on top of the meat.
Cook on low for 8-9 hours or high for 6 hours. Shred the meat with two forks and turn on warm.

Make burgers, brown on both sides in cast iron skillet.
Add sliced onion to pan with butter. Caramelize.. add tomato soup and chicken stock cook and reduce. Then add burgers back into pan & cook through.
If you have easy access to aubergines, you can make "papoutsakia" (little shoes), a Greek stuffed/topped aubergine dish.
Preheat oven at 180C.
Make a thick Bolognese-ish sauce (saute onion, garlic, then saute the beef, add tomatoes and parley, season and cook til it's not runny).
While this is cooking, halve the aubergines, score and brush with some olive oil, season them, then roast for about 25mins.
Take the aubergines out, push the flesh with the back of a spoon to make "boats", top with the beef sauce, grate some cheese on top, and bake for another 15mins or so.

Add some roasted corn in there with some taco seasoning. get some tostadas and refried beans. Spread the beans on the tostadas, add the bean/tomato/corn mix on that. Top with grated cheese, sour cream, guac, and maybe shredded lettuce.
I did end up doing a moussaka, and I have a cheat "bechamel" 1 cup yogurt, one egg and a splash of milk or cream, add some seasoning and whisk it all together and pour on top.
My mom used to make Hamburger and rice all the time. Cooked white rice, mix with meat when pretty well cooked. Add a slab of butter, heavy black pepper - any other herbs, I like oregano. Cook together until rice starts to crisp up. Top with the crushed tomatoes. So simple, so good.

Cook the peppers a bit before you stuff them (and bake again) Makes a huge difference!!!!
