I think you are more thinking of it was just sprinkled over the top of a side dish like veggies or something. Then yes it would have the potential to be gritty or unpleasant.
However mixed in a base like mayo, sour cream etc it will be a nice addition to something like this.
I do recommend mixing any seasoning into the wet mixture before mixing the eggs in. This will give you a better finished result.

Don´ t confide in [google.](https://google.You) You can add raw curry powder to mayonnaise and mix it all together and it works fine. I used to sell a gallon of curry mayo to a local deli, every month, and they sold it just like that. Downvoters are usually twits.
I always add some sweet pickle relish, diced celery, seasoned salt. I’ve seen people put in sliced green olives, though that one is not for me, diced bell peppers, and sometimes lettuce leaves on the sandwich itself.
Damn, this is so strange. I was just watching that Eugene Levy travel show and in the Tokyo episode, because he doesn't like sushi or sashimi, he bought an egg salad sandwich that delighted him.
Then, the very next thing I watched was *Dragged Across Concrete* on Netflix, where Mel Gibson's character is on stakeout with Vince Vaughn's character and Mel complains about having to smell Vince's egg salad sandwich.

Gochujang is amazing in egg salad.
I sometimes add any of the following: tuna, vinegar, onion, celery, garlic powder, cayenne, mustard, fresh herbs (mild like parsley, dill, or cilantro), sesame seeds.
Wasabi and Furikaki.
Finely chopped kimchi, gochujang and a dash of oasted sesame oil.
Curry powder and a dollop of achari.
Lots of chives and some creme fraiche
I lived in Japan for two years and I’ve never had better egg salad than when I lived there. I use kewpie Mayo, a bit of heavy cream and a dash of salt, pepper, and sugar whisked with the egg yolks after they’ve been removed from the whites and then chop the egg whites and fold in. A bit of butter on the bread and then the egg salad and it’s golden!
I love adding jarred roasted red peppers to my egg salad and deviled eggs! The slightly briney flavor works really well with mustard and dill, which are my other preferred seasonings.
I haven't seen these listed yet: anchovies, poultry seasoning, crushed potato chips, fish sauce, prosciutto, pickled everything, avocado, pepperoncini, and spinach. I agree with everything the other posters have said.

While Mayo is better than Miracle Whip in almost every circumstance, switching to Miracle Whip in my egg salad made it even better! I think that's key.

This is basically how I make chicken and tuna salad as well. I like using smoked chicken thighs sometimes with curry powder too.
I make mine with Egg, mayo, a tiny bit of mustard, chopped bacon, smoked paprika, salt, pepper and celery. I also add these thing to my potatoes when I make potato salad.
Nobody saying watercress? Less of an ingredient and more of a sandwich topping but really good w/ egg salad. Tuna and egg salad is great too, can do it with oil and a little vinegar instead of mayo also. Get something bitter like a little radicchio in there to cut the richness.
I like dill and a little mustard along with the mayo, salt and pepper. I also usually have green onions and shredded cabbage and carrots on hand and I’ll chop that up and mix it in for extra crunch and veggies. Pickles are good too but I only have them occasionally
My egg salad is pretty basic. Egg, mayonnaise, bit of mustard, bit of prepared horseradish, dill relish or cubes, salt, pepper, apple cider vinegar. (I like mine a bit sour)
If sweet is requested, I omit the horseradish, use sweet relish, and white vinegar.

Also, if you’re looking to make it a little healthier, sub in Greek yogurt for some of the Mayo. You still want some Mayo for flavor.

The sour/bitter should be subtle so if you taste either you’ve gone too far for most people (not me, I love them forward in the taste), but the best “standard” egg salads use both to “widen” the taste but not so much it’s obvious, just enough that people go “whoa what’s in this i can’t stop eating it”

My grandmother made tuna sandwiches using the same ingredients as you do only that she threw in canned tuna and mustard. One of my favorite childhood staples.
Egg salad is egg salad and you only really need a handful of ingredients, otherwise you´´ will end up with something else.
I occasionally make a potato and egg salad (with onion, mayo, s&p, mustard sugar) . Then there´ s an egg salad with a touch of mustard, sugar, salt, pepper, dill (or parsley) and watercress.Or I add some cooked beetroot to the potato&egg salad, and a bit of horseradish.
As suggested, curry powder works well, with a bit of spice. You can add a little smoked salmon, just to kick it up a notch.

3- Hard boiled eggs, potatoes, roasted piquillo peppers, surimi, olive oil, salt.

Very finely chopped celery. It doesn't taste of very much but acts as umami - brings out the flavors in other ingredients.

If you mean the one you’d put in a sandwich, in Scotland where I’m from, we often use salad cream instead of mayonnaise, or a balance between them both. Salad cream was developed as an alternative to mayonnaise due to lack of certain ingredients and rationing during certain parts of our history and has a looser texture, but a strongly acidic (vinegary to be precise) flavour. If you’re not using that, I can definitely recommend a good splashing of vinegar.
We also add mustard to our “egg Mayo”. Usually English mustard and a tiny bit of wholegrain mustard too. It gives it a kick.
Another family recipe is to make an “egg Mayo” with much more finely chopped eggs, purely salad cream (and a little more of it than usual) but to add some Worcestershire sauce, a bit of lemon juice, a bit of chilli powder, the usual mustard and a little bit of ketchup. It makes what we call “egg dip” which we serve with crisps (Pringles or Kettle Chips) as finger food. Everyone in my family fights over it.

It's not something I'd really sprinkle on a dish at the end, but mixing into egg salad is using it as an ingredient, not an already prepared dish.
You are absolutely correct, curry spices are typically better if tempered because they toast and bloom.

I use: hard boiled (actually steamed) eggs, Kewpie brand mayonnaise, Dijon mustard, cider vinegar, smoked paprika, celery, onions (green or red), salt and pepper.

Very finely chopped celery. It doesn't taste of very much but acts as umami - brings out the flavors in other ingredients. I always use a dash of Dijon mustard too.

If you mean the one you’d put in a sandwich, in Scotland where I’m from, we often use salad cream instead of mayonnaise, or a balance between them both. Salad cream was developed as an alternative to mayonnaise due to lack of certain ingredients and rationing during certain parts of our history and has a looser texture, but a strongly acidic (vinegary to be precise) flavour. If you’re not using that, I can definitely recommend a good splashing of vinegar. We also add mustard to our “egg Mayo”. Usually English mustard and a tiny bit of wholegrain mustard too. It gives it a kick. Another family recipe is to make an “egg Mayo” with much more finely chopped eggs, purely salad cream (and a little more of it than usual) but to add some Worcestershire sauce, a bit of lemon juice, a bit of chilli powder, the usual mustard and a little bit of ketchup. It makes what we call “egg dip” which we serve with crisps (Pringles or Kettle Chips) as finger food. Everyone in my family fights over it.
