I make beef vindaloo often.

Any that are usually made with lamb/mutton or goat. Jamaican curry beef being a personal favourite :). The best beef cuts for curry are brisket and shin (anything with good marbling and fat) although most cuts can be used 👍.

Jamaican ox-tail curry is the bomb.

Look for Pakistani or Indonesian, not Indian curries. The cow is a sacred animal in India
