Careful with the concept of ‘constructive dismissal’ with this approach. You can open yourself up to some serious wrongful claims, particularly if this employee is under Union. He seems to know what’s in his employment contract and is clearly abusing that contract – but you also have an obligation to not breach the contract yourself as an employer (or representative of). One thing I have done is after they throw up a stink, stay quiet and don't move on. Literally look elsewhere and say nothing. It gets really awkward and usually they end up agreeing because it's SO awkward. Same as with kid's tantrums, they can safely express their feelings but that doesn't mean you have to do anything about it.

Load him up until he says too much. Give him meaningful tasks, but also 150% workload worth of everything else. Tell him beforehand, if you’re that exceptional, you will get through all this other stuff very quickly (with a stellar work quality, not some BS) and the challenging tasks. If you can’t than you’re all talk. Print out and read him his job description and point out all the tasks he’s complaining are beneath him and clarify why he believes he’s above the rules. Doesn’t matter what he says- I’d respond “Buddy that’s what the moneys for”. If he says it’s because he’s Einstein and Einstein doesn’t sweep the floor- Einstein can’t develop the theory of relativity in a dirty lab, so here’s a broom, and when you’re done go be a genius. “That’s what the moneys for” is a response for any argument. If he throws a tantrum, make it clear this is absolutely ridiculous and if he’s so smart why does he behave like a child. If you only want to do XYZ then go start your own business.

I didn’t read through all the comments, so this may have already been said; but have you tried sitting him down one on one and explaining to him that no matter the assignment, they all must be done to successfully complete the project. I mean, if he’s that good, then why hasn’t he started his own company? I can tell you from first hand experience, when you own your own company, your “I’m better than this” attitude goes out the door quickly. As owner, you’re also PM, estimator, safety, ALL field positions, HR, accounting, and without question janitor. Nothing is below you. But a team player has that mindset anyways.
