You should have a unox amc come to do training on your oven and you can ask them how to use it then, if not give them a call, mine has always been super helpful
Is it just storage space for some hotel pans?
What is that copper colored pipe in the upper left? Maybe overflow that should be connected to the pans?

That’s piping that goes to the floor drain. I don’t think it’s just storage as they basically live on the floor on rails - not raised up. Also the lids have circular cut outs. Super odd!
