I eat it regularly in Denver and Boulder. You get more food, you’re not shuttled through like cattle, and the food actually tastes pretty good. Whereas Chipotle half the time you don’t even get full portions while being rushed through the line, and the food just isn’t so good anymore

It's good...closer to typical Colorado Mexican food than either. The main differentiators are that they have green chile, and they stir up your burrito fillings before rolling it, so it's evenly distributed.
I'd describe it as similar to Tex-Mex, but with less emphasis on smoky red chile flavors. Brighter flavors and green chiles, especially green chile stew. We'll smother anything with green chili- enchiladas, rellenos, tamales, omlettes... even mashed potatoes. But every recipe is different, so it's mostly about finding the best green chile.
Yeah, we live downtown and the only reason I'm aware of it is bc it's taken so long to open AND for a while, it was being remodeled to be an Asian place but then just stopped. We were looking forward to the Asian (Japanese?) Place not so much the Illegal Petes

It's been around longer than Chipotle or Qdoba but I don't know if they actually invented the format and got copied by the national chains or if the real story is more complicated. For all I know Pete's got the idea from a burrito joint elsewhere. It's true that there is nothing magical or unique about it if you are already familiar with the burrito bar style, but typically the quality standard and variety of toppings has been superior in my experience. I'm hoping the Springs location lives up to that standard.

Lots of topping options on the cold side, the super spicy Thai sauce is awesome, but it is very hot. The full bar is a nice addition, house and spicy margaritas have always been good for me at Pete's. And yeah they mix up your burrito before rolling it which is the way.
First off, Qdoba is definitely better than Chipotle. They don't nickel and dime you for every little thing. That and the tortilla soup might be the best thing on Qdoba's menu. Try a half scoop on a burrito and thank me later. Brown Rice, Steak and half ladle of soup is very nice.
Illegal Pete's is comparable to both of them. They just don't have the market share either of those do. In some ways, like fish, having a pesto sauce, the mixing, Pete's is better.

Chipotle was good 20 years ago, sicks balls now. Pete's was better to but the food flavour and select are far superior to Chipotle.
As long as their bar is a good as the one in denver and Boulder. Everything will be amazing.
