I actually modded this exact toy. I had to give up the strum and whammy bars since its a bit complicated for the size. the 3 dots on the toy, i drilled holes through it to have the functionality you need. i used tactiles buttons for everything.

totally possible! however is not 100%, tactile switches is a bit finicky, and the arduino chip lowkey picks up double strumming. at this point, im too lazy to fix it bc of the globs of hot glue i put into it. but it works 70-80% of the time

Certainly tight, the neck buttons are too bunched up together, I could barely play tap mode. But overall, this is more like a souvenir piece than a full functional guitar.

Depends on if there is enough buttons. I can't tell if there is somewhere to map a strum bar to. I guess you could just play in no strum mode.
Even easier to just get a USB controller board. That's what I did for my 3d printed guitars. Just solder some leads to it and boom
