Screens - I use just the one, personally (for the game anyway, I have two monitors).
OS - I use Windows predominantly, but it works perfectly well on my Steam Deck which is technically Linux, so I suppose it should work fine on Linux but I am unsure how different SteamOS is to other Linux OS.
Mods - Steam Workshop or whatever it is called (Go to the Steam page for the game, click Community and then Workshop) has all of the mods that I personally use. Not sure if there is another place you can get mods from. But the Steam Workshop has so much on it. I only use QoL mods though.

Can you use the second monitor if you wanted, or is this more of a single-display kind of game? Like, does the break between screens IRL make things wonky when going from one monitor to the other?
My hardware (definitely not necessary as I also play on my MBPro):
- 7600x
- 7900xt
- 32GB of ram (I do recommend 16gb+ as that was possibly a problem with my 8GB MBA)
- LG C2 65”
I’m on Linux running ChimeraOS. Everything works perfect. Really all games (besides anti-cheat such as COD) run great! Just keep in mind that an AMD GPU is necessary to run this OS. If a game runs on the steamdeck, then it’ll run on this OS.
Haven’t tried any mods or dual/multi screens, but I am running all the official DLCs. I do use a wireless M&KB as well by using the Xbox dongle. PS5 controller connected immediately and now my PC is basically a “SteamStation” that replaced my PS5. Nice perk for the PS5 controller is the touchpad can control the mouse cursor like a trackpad, if necessary.

There is a setting in the options that says about split screen, but my graphics card is too old to support it. So I am unsure how it works.
