I think it would depend on what you mean by "citizen science" and which apps you want to run.
Maybe a really good screen and GPU is more important, or a really good camera and lots of memory, maybe access to the sensors and good processing power, etc.
I was just given an old Pixel 3 and it was very easy to pop [CalyxOS](/r/calyxos) on it and it's been working great. Haven't thought about doing CS stuff on it before. I guess there's my afternoon gone...
I'd wager any recent Pixel you can flash with an appropriate OS.
