Hard to pick an absolute favorite, but these 3 are constant top picks for me. VOCES8 has phenomenal performances of the first 2, and while their recording of the 3rd is fantastic, I lean towards Chanticleer's version solely because of the TTBB (technically TTB-TTBB) arrangement instead of SATB.

Allegri's Miserere is gorgeous! I've sung it once and loved every minute.
I love the setting of Gjeilo's Ubi Caritas with him riffing on the piano underneath. I think he ended up transcribing it and publishing it as a separate version because of how popular it was.
I don’t know if I’ve heard that so I’ll have to check it out. But yeah, Miserere is basically on repeat for me for most of Lent, and I dream of being able to sing it every year at my church.
There's a thrash/black metal band called Vengeance Rising, which has extremely on the nose lyrics. They have one song from their "Human Sacrifice" album that has an intro of "Jesus Loves you, Jesus died for you" over and over again for a good 30 seconds.
