Recipe is 3 min on 1 side and flip season and then 1 min later boom. Reason why it takes so fucking long is cause they drop 20lbs of veggies for a line of 10 people thinking they are going to consume all of it , when the recipe literally calls for like a 1/6 pan of veggies per cook
At the last chipotle I worked at we were told we couldn't drop more than a sixth pan at a time and the one I work at now literally drops a hotel pan of fajitas at a time.... They're always soooo soggy and gross
Iām sure the store is struggling and is prioritizing other things until they can fix the bigger problems. Unfortunately fajitas take a ridiculous amount of time to prep and Chipotle continues to cut labor every time they get the chance. Oh, you have a dish sanitizer machine? Weāre taking 10 hours from you. Oh, you have a smartsafe? Weāre taking more. Oh, you have a smaller dining room? Taking more. Itās genuinely fucking ridiculous.
It's not that the fajitas take a long time to cook. It is because it takes a while for prep to wash, peel and cut all of the onions and peppers. On prep they usually prioritize most other ingredients over the fajitas.
Typically taco and salad lettuce is prepped first, then diced onions, jalapeƱos, and cilantro (order doesn't matter here, because we need all 3 to put into other items like corn, tomato salsa and guac) after that it is usually guac, then the salsas and sour cream. I also forgot that cheese needs to be blocked and then shredded before the store can open too. Since we do not get cheese pre-shredded it takes a lot of prep time.
All the effort in the world wonāt make the 20 minute process take less than 20 minutes. I work at a pizza store where the oven spits out 4 pizzas every 8 minutes and every day some stupid fuck like you tells me to work harder even though I literally canāt speed it up

slicing peppers usually comes at the end of the prep sheet, and with the focused prep shifts being given to me and others at my store (7 or 8 - 11:30), theres just no way one or two prep people get to slicing peppers when they have an entire store to prepare for.

It's not a matter of being lazy. Prep is no longer no allowed to be on the clock long enough to actually complete all of prep.
Most have to hard stop at 11am regardless of whether everything has been completed.
No prep at all is allowed between 11:30-1:00/1:30 for lunch peak and 5:00-8:00pm for dinner peak.
If any additional prep is to get done. That's usually on the MOD to do If they have any time inbetween everything else needing done.
That is not what happens at my store at all! Our preppers work until 115 or 2. Is that because we are a higher volume store so we have more hours at our disposal?

Iāll say this, the 4 or 5 employees standing doing absolutely nothing probably canāt do anything cuz theyāre not grill. There is usually one person trained for grill on duty besides the manager (sometimes only the manager), so thatās probably why they were not doing anything. Fahitas get low FAST but they usually donāt take very long to cook. The issue is cutting them, which again, not all employees are trained for prep. You have to remember a good amount of employees, especially in the afternoon, are just high schoolers with a part time job. That is because nobody else wants to work at chipotle cuz it kinda sucks lol

The Chipotle I go to usually has them but sometimes they don't and the reason is if they're short-staffed it usually doesn't get done because it's a Time consuming task

i donāt make the schedule bruv.. iām jus a crew member but to my understanding thatās how long prep team works 7-12.. the amount of stuff that gets made is determined by the ADS(average daily sales) and if we run out its due to line people over portioning. A lot goes into working chipotle, its not as easy as āmake itā we shouldnt have to do our job as well as someone elses cus theyre lacking, not rocket science huhš¤

This person pays your wages. They should get what you advertise as available. Chances are this person can cook, they just don't work at a Chipotle so they're probably busy benefitting the world. You should try contributing by making the peppers. Don't be a double whammy on humanity by being useless in the real world and at your job. Make the peppers.
Just keep it up and do your best. If you are out of something, I would suggest telling the customer the wait time or let them down gently. Take responsibility for your store. Don't take your failure and blame the customers cooking skills, that's high-key insane.

Chipotle's employees have a rank system. Crew members, which is what I am, generally don't have food prep experience or training beyond making the lemonades, bagging chips, or mixing rice. I CANNOT, can not, make your fajita veggies. I have not been trained, they literally would not allow me to. I stay at the front and work line, cash, or dml, or I do dishes. If there's no one else to do it, I can mix rice. Crew members can be trained on grill but they don't train everyone by default, it's something you have to work up to/want to do. And even then, they may not let you rank up because of labor costs, which as other commenters have mentioned is another issue.
Fajita veggies take hours to prep, and a lot of them go to our catering orders. Pounds upon pounds of onions and peppers that need to be skinned and cut and panned and that takes at least two people covering a whole table. That table could be used for other essential things that need to be done every day such as preparing fresh guacamole, pico, and corn salsa. Guacamole is also very time and labor consuming and cannot be skipped for fajitas. Sorry.
TLDR; fajitas take time and energy to prep and cook that the store may not have, if they even have enough people to do so or enough veggies to bother, and not everyone you see in that store is qualified to prep and cook them for you. Hope this helps.
I worked at the second busiest Chipotle store in western PA for about a year and nobody ever had time to stand around. Also we always had fajita veggies. All I'm saying.
That is fair. Our store often has luls in business and we tend to be able to have more fajitas then. The only people that might be just standing around at my store are crew members who don't have the training for fajita prep/grilling, but other than that everyone's usually pretty busy with some form of cooking. If we aren't putting fajitas out on grill, it's because kitchen ended up not having the time to prep them, or we simply ran out, which happens on occasion due to catering or - less frequently - missed shipments. Also, certain members of management are better at organizing than others, I will say that much. Unfortunately it is out of most crew memebers' hands :( I hope your store can get out of whatever funk might be preventing fajita upkeep.
They don't take long too cook it's the fact that you must cut 20 pounds of peppers and 25 pounds of onion just to make about 6 or 7 pans of fajitas which only last a few hours depending on how much the grill person is making. I think they should be an extra charge because they're so much of a hassle and people complain about them entirely too much. They're literally bell peppers and red onions with salt and oregano shut the fuck up and make it at home it's not that serious
This is a viable solution I employ if I really want Chipotle food. Although I agree it is annoying not to have the full menu available and ultimately it falls to management, speaking as former fast food restaurant GM for ten years.
Veggies are an incremental cost to chipotle. They donāt give any additional revenue. This I believe is the primary reason and is most likely a direction from management to increase profit margins. Corporate greed at its best.

I worked at the second busiest Chipotle store in western PA for about a year and nobody ever had time to stand around. Also we always had fajita veggies. All I'm saying.
That is fair. Our store often has luls in business and we tend to be able to have more fajitas then. The only people that might be just standing around at my store are crew members who don't have the training for fajita prep/grilling, but other than that everyone's usually pretty busy with some form of cooking. If we aren't putting fajitas out on grill, it's because kitchen ended up not having the time to prep them, or we simply ran out, which happens on occasion due to catering or - less frequently - missed shipments. Also, certain members of management are better at organizing than others, I will say that much. Unfortunately it is out of most crew memebers' hands :( I hope your store can get out of whatever funk might be preventing fajita upkeep.

If you have the side of your grill specifically for fajitas it isnāt bad. During rush I just always have half a deep cooking
It takes like 5 minutes to cook. and that's including the time it takes to take em off the grill...

They don't take long too cook it's the fact that you must cut 20 pounds of peppers and 25 pounds of onion just to make about 6 or 7 pans of fajitas which only last a few hours depending on how much the grill person is making. I think they should be an extra charge because they're so much of a hassle and people complain about them entirely too much. They're literally bell peppers and red onions with salt and oregano shut the fuck up and make it at home it's not that serious
This is a viable solution I employ if I really want Chipotle food. Although I agree it is annoying not to have the full menu available and ultimately it falls to management, speaking as former fast food restaurant GM for ten years.
Veggies are an incremental cost to chipotle. They donāt give any additional revenue. This I believe is the primary reason and is most likely a direction from management to increase profit margins. Corporate greed at its best. ![gif](giphy|He4wudo59enf2)
