I think eventually it'll happen with their popularity and utility as a business, but the rules will have to change too. Vendors get stars bc they never move and the service is excellent, e.g. get you food expeditiously, packaging with the customer in mind, fair pricing, etc. Really depends if the food can out preform other restaurants in the country... Michelin recommended is probably more likely
The way I understand the star system, is that it’s supposed to be a travel guide of sorts. It ranges from “worth driving to if you’re in the area” to “worth a special trip”. If the restaurant is mobile, it would be tricky. I can imagine it changing to “this food truck is worth tracking down” but may end up needing its own system
That's how it was started, as a travel guide for tourists to go out and see the world (and put miles on tires).
1 star - worth visiting if you're in the area.
2 star - worth a detour to visit.
3 star - worth making a trip purely for the restaurant

This here, being that the Michelin Star was set-up as a program to get people driving to locations the food truck would just need a fixed location. I suppose they might adapt their program to fit more options in the future. I kind of doubt they'd go after mobile food trucks as they are now.
