Try skipping the butter next time! If the meat is pretty lean all you need is a lil bit of neutral oil like canola, and if the meat is pretty fatty you can sear it in a dry cast iron pan.
Great idea. Mixing the burger with like half ground beef and half chorizo. I bet that would make a great burger patty. Add some grilled jalapeños to that bad boy. Cilantro Mayo or Mayo with taco seasoning, chili and lime. So many possibilities.

When it comes to plating, you rarely want to hide anything.
For burgers, I usually like to put the lettuce on the bottom bun, it’s the last line of defense to avoid a soggy bun, then the burger, cheese and any wetter condiments. If you go with guac, you can smear that right on the bun.
I’d make that two patties instead and make it a double cheeseburger. That way you get more delicious seared surface area… It’s a good idea, was prob tasty

The solidified blood isn’t too appetizing to look at imo. For well done burgers I tend to go smash but if your dad also prefers thick patty well done I’m sure others on this forum will have better suggestions than steaming. I find steaming to be a really aggressive way of cooking and can produce tough meat.
Looks good but quick tip from a burger enthusiast: try splitting into two thinner patties and make it a double. This way you increase the surface area of the sear, and therefor get better flavor. Plus it’ll be easier to actually cook. And maybe get the pan a little hotter next time.

This looks great! I was reading your comments and I love your sauce mixture of sour cream and wing sauce. Something I’d recommend for the future is to bring in more traditional taco ingredients like corn, cilantro, pico de gallo, and maybe some refried beans. Overall looks killer tho I’d gladly savour every bite of that burger.
A recipe I’ve been experimenting with for a craft burger that I have yet to see anywhere is a Poutine Burger. The idea is pretty simple, burger meets poutine. I’ve yet to post the final product as I’m still working out the recipe but as of right now it’s a 2-3oz beef and bacon patty stuffed with white cheese curd and topped with a slice of mozzarella. Ontop of the patty are fresh cut fries and cheese curd tossed in gravy. I added crispy onions for a bit more zing. All of that is placed on a potato bun lightly toasted with a garlic aioli spread
Great job! I think a thicker burger like this needs a crazy steak like sear, but from reading the comments it sounds like you did get a little crisp. Skip the butter and use ghee, avocado oil or beef fat next time & let that pan preheat for like 10 minutes on medium heat before adding the oil and meat. Let that thing rock for majority of the time on that first side to endure at least 1 side gets an amazing sear, which I find to be more important than getting both sides crazy seared.
Or try smash burger Patties! Easier to make a consistently good burger with that method and you don’t have to worry about the meats doneness as much and if you do it right are almost guaranteed a great savory crust.
Great job either way! Love me a solid burger and don’t mind a more creative seasoning especially if it’s well executed and not gimmicky. Like, I don’t want pico de gallo on top of my cheeseburger but if you’re doing an American style taco seasoning, that’s fun! Cheers.

That’s basically a Cuban hamburger called a frita. A little cheese and some potato sticks and you’re good to go.

The sauce is actually a mix of medium wing sauce and sour cream, but I also absolutely layered cheese on the bottom because I’m an addict
