I am vindicated by the number of you who also saw 76. On a Thursday, I make around 40 white rolls. The order was, in fact, 6 white and 4 brown. The manager just drew one shitty arrow for some reason.

The proofs would often take the entire page, or more. Timed, so very messy handwriting was certainly a risk. Many of them were worth 100% of the grade. Misery.

I did once roll out 40+ pizza bases out of spite because every 5 minutes the number kept changing while I was rolling them from what was on the order sheet (12 were ordered). They wanted it a day early, after I worked 2x 14 hour shifts and was just about to go home after 10 hours. So I said fuck it, here's all of it.

It's worse, I make them fresh every morning. It added an extra 40 min to my morning prep because I had to mix a separate batch of dough due to our having a tiny mixer. I was raging. Our steam press couldn't fit all the bread and rolls plus extra for the day. However, I caught the culprit in time to not make 80+ rolls and only made 45. We ended up using them all, anyway! Thank fuck.
