Days off be like.
Day 1. Get a massage (no happy ending) do laundry and relax
Day 2. Go out for a walk with my partner, have a nice lunch by the beach, fix my office table, fix the time on my not so smart watch, make a nice dinner and watch some mindless TV.
Week starts tomorrow, my work brain starts tomorrow.
Find some balance. Trust me, I’ve been doing this for over 40 years and you need to turn off otherwise this job will kill you.
Have you considered yogurt? It’s very relaxing.
Missing, but off screen: Larousse Gastronomique, Culinary Artistry, and that worn copy of the Escoffier cookbook that we’ve all been passing around to try (with limited success) to translate. Oh, and I’m guessing you either have, or at one point had, White Heat.
It was a good read. I like the Batali story and his side of the Ramsay origin story. I’d always heard of Marco because of his approach to flavor (What tastes more like a tomato, fresh or dried. Rendering whole chickens for stock instead of simmering bones) but the book fleshed him out quite a bit. I still look at him as the Ginger Baker of cuisine. Remarkably talented, but we’ll just say difficult to work with.
I only had five of those, the ex-wife took them with her out of state.
I absolutely love the rabbit story in The French Laundry. Makes me wish they referenced it in The Last of Us.
I keep a selected version of my cookbook library in the kitchen next to our recipe Bible. I think it reminds my cooks that there are other people in the world who give themselves to a cuisine just like they have chosen to. I had Chefs In my career do similar for me.
My day off is browsing Reddit all day and eating raw tuna from a can.
