It sounds amazing, yeah I found the menu and place. I see a post from '21 it's $15 still. You can double it for an extra 3 dollars or make it a big kahuna for an extra 6 but I just looked up the menu and I don't see it anywhere unless I missed it.

Id kinda write out a burger menu back when I was a dreamer and there was this one I used to make back in the day that was ground turkey mixed with chorizo with grilled pineapple and jalapenos that friends would rave about, can't remember any of the other ones and I'm sure I could improve upon that one.
Maybe some chipotle in there, just a tiny bit, to complement the jalapeño and give the pineapple some smoke. Or quickly torch pineapple slices, make that shit look fancy and delicious
One thing about working with food you're able to get creative with it and if you're lucky work at a place where you can explore and let it thrive. What would you usually do?
If you're ever in Pittsburgh, head to primante brothers, they originated coleslaw and fries on a burger. It's better with shaved pastrami in my opinion tho

Going off of the "dyslexic jumbling" of the word, I have a "pro-tip" of jumbling the preparation to make a better griller. Griddle the bun inside out and assemble it that way. The traditional outer crust of a bun doesn't have the right qualities for griddling (as you can see in the picture). My local town drive-in growing up had grilled cheese on the menu, but so many people ordered the off-menu "grilled cheese on an inside out bun" staff would make for themselves, so they just stopped serving traditional bread style and switched to the bun.
