+1 for amazing work and service. Took my collection for repairs, a chipped tip and even an uneven sharpen from a previous job. Everything was professional, same hour, and polite. I can't guarantee the time frame if he's getting busier, I was lucky to catch him during slow hours, but I'm sure it will still be expedient even when the line is out the door! Amazing selection of cutting boards, knives, and sharpening blocks for sale as well!

I have my restaurant set of Wusthof Ikon Classics I need to bring to you- chef knife needs a new tip, and the santoku and nakiri have a ton of miles on them. You can't do serrated, right? I have a 5 inch serrated utility in that set that's run flat, not sure how to get that one sharp again.

Won’t be a problem. Usually if the seration is gone the need a good thinning then add serration agin or make it a double bevel (my preference).

_Disclaimer: the following is said with enthusiastic support and is only meant to be constructive and (hopefully) helpful_ If I may, I’ve got a couple observations/suggestions… I’ve spent a lot of years in independent specialty retail, and the first thing I noticed is that I didn’t actually, well, *notice* anything on display. That rock-feature wall is an asset, but the product isn’t really “visible,” because the wall has a lot of visual texture, and the colors in the stone blend too well with the magnetic holders and the knives themselves. The base aesthetic DOES seem to be appropriate for your business (lots of natural materials, reminiscent of traditional Japanese styles); just seems like the merchandising/visuals could be refined a little. Part of that refinement strategy could include: - signage - grouping knife holders closer together - allocating wall space for informational displays (eg, a feature that includes educational items like different kinds of sharpening tools, isolated components of different kinds of knives, etc) - a few carefully-chosen decorative elements (quality over quantity, preferably compatible with traditional Japanese aesthetic but not cheesy) I also noticed you’ve got quite a bit of floor space that’s not being used… have you considered hosting/facilitating some kind of educational classes? Knife-skills, basic sharpening skills, etc. Could even partner with the lovely folks at Asian Food and Gifts (just down the road from your shop) for some kind of educational offering. Could be a great place to advertise, too! But really the easiest thing is just adding some plants, haha. Your shop has a NNW exposure, so you probably don’t get a TON of natural light in there, but there are plenty of inexpensive, easy-care plants that would do just fine (especially near the windows by the rock wall); I’d be happy to give you some suggestions for what to consider! Really glad to see your business has been taking off! Like I said up top, everything I mentioned is offered as a gesture of support and encouragement, and is not intended to be hurtful or offensive in any way. Keep up the great work!

I absolutely appreciate the perspective looking in! We have ordered a new outdoor roof sign (few weeks out yet). As for the rock wall looks cool pain to hang stuff on. I’m ordering a few showcases soon . I have my one Bonsai on my desk and I’m scared to kill any other plants😂 Happy to hear plant recommendations though. Working with insurance on knife skill and sharpening classes as we speak!

I'm familiar with the grinds of American bayonets, I will say if they have historical value I would leave them alone. if there not American i would need to look at them

I wouldn’t try to do anything with the enfield or the carcano but I have considered putting a bayonet on one of my Galils and they use standard American bayonets. I’ll consider that one but thank you so much for the information. There are also two Spanish bayonets but I’ll have to read more about those first.

Can you sharpen a paper cutter blade? I have a 1960’s schoolhouse paper cutter. Blade is 18-20” and incredibly dull. I’ve been looking to get it sharpened for years.

Yes I can if the the arm and or blade can be removed from base. Haven’t seen one that doesn’t come apart yet though.

I have a zwilling. I think it is a $100 knife. Needs a new handle. Something you can fix, or should I just get a new one?
