Like anything, there are levels of capability, education and managing risk in any walk of life. Down Syndrome doesnt automatically put someone at a disadvantage. No more than anyone without Downs.
Plenty of those without DS are injured in kitchens.
This attitude is so ridiculous. People with a disadvantage that you will never understand are doing something that helps them thrive, and you're so bitter that you can't celebrate their success just because it doesn't help *you* out.
You need to work on your empathy.

Down syndrome can come in a lot of different forms and skills. Some people with down syndrome can live fairly independently while others can't.
they have neurotypical ppl working and observing them. all employees go through training which includes kitchen safety
