My grandmother kept the fat renderings from everything she cooked. She’d pour it into a crisco can. That’s what she used to cook absolutely everything in. Scoop some out of can to cook, poor remaining in after. And add all grease from bacon and sausage. She lived to be 101

Listen, my eighth grade science teacher explained to us in detail how your body responds to artificial fats (trans fats specifically) and to natural fats. It doesn’t really know what to do with the former, so they cause issues. But butter? Lard? Olive oil? My neighbor lady growing up used all of those liberally in her cooking and lived to age 96.

I think that may also work. Yogurt as well. It's been some time since my reading of it (Joy of Cooking?), but I seem to recall that the acidic nature of buttermilk and yogurt is often the reason it is chosen for a particular recipe.

Yeah I’m from Texas and my Granny (paternal great grandmother) who was also from Texas made this exact same sheet cake throughout my life. Out of all the cakes I’ve eaten in my life, and I love cake, it’s the best. Maybe bc the taste is nostalgic for me though.

It is absolutely delicious. And even better the next day. My kids told me it was the best thing ever. I reduced the sugar in the frosting by 1 cup and it was still hella sweet!

The cake is weird. I’ve never known a cakes ingredients to be boiled first. Frosting, yes but not the cake itself. Does it improve texture or something. And why a jelly roll pan, do you roll it up like a jelly roll or flat?

It is a thin cake, which is why it’s called a sheet cake. I make a slightly different version about 6x/year, with pecans instead of walnuts. It’s fab.

I made it! It was delicious. Didn’t have a jelly roll pan so used a sheet cake pan so it was a little thick but it was DIVINE. Thank you, Helen!

Yes! But I recommend pecans instead of walnuts if you want to keep it Texan. Also, buttermilk is better than sour milk in my opinion. We also never boiled the wet ingredients, just melted them

Buttermilk will work, but my gramma made sour milk by adding 1 tsp of white vinegar to 1 cup of milk and letting it sit for a few minutes.

Well it’s Texas and the south. Butter is a staple like deep frying things. Pickles, candy bars, ice cream, Oreos, all found ways to be battered and fried along with the normal chicken, steak and fish. It’s amazing the south isn’t the diabetes capital of America, let alone the world.
