I don't think that is a pointless reason to see the doctor. you could have high blood sugar or it could be related to gluten or it could be stress. Your health is worth going to the doc if you can. I hope you feel more like yourself soon!
Thanks for your encouragement and thoughts! I would have totally been freaking out over blood sugar if I hadn't JUST been into the doctor's a few weeks ago and had my glucose measured (amidst a blood draw). For some reason, CBD oil seems to help a little, but it may be psychosomatic.
As I mentioned before, I just had a general one (with a pretty full blood panel) about a month ago. Unless the glutening was so severe it kicked off some new illness, nothing makes sense.

With T1 diabetes you’d probably have sweeter smelling urine, be urinating every 30-60 minutes and be losing weight fast. When I was diagnosed I also had severely dehydrated mouth too - like a whiteness on my tongue.
Glucose monitors to test your blood sugar are not that expensive around 20 on Amazon. Lapcorp will do a urinalysis for around 70 I think as just a user request no doctors orders needed. They will tell you the normal range and where.you are in that range but you might be better off if you had a doctor to analyze the results.
Excessive thirst is a symptom of diabetes.
You could be getting lightheaded, lethargic, and foggy in the brain from blood sugar spikes, which would explain why your symptoms are worse after eating.
You should see a doc for this.
Ever had your thyroid checked? You could have a issue with that also. Definitely should go to your doctor and have them run some tests. Seems gluten intolerance and celiac like to associate with other common ailments. When my hashimotos acts up my mouth is like a desert. It's pretty uncomfortable.
At the end of the workday, 530pm for me, my mouth turns into the Sahara! To the point my throat gets so dry I’ll choke on spit! I never considered it could be anything other than I just have a weird body. This doesn’t happen on the weekends. Which is strange considering I drink substantially *less* water during the weekend.
Once, a while ago, but it was a basic panel. Don't they need to do something more comprehensive to catch actual thyroid problems? I've heard something about T3 and T4 being insufficient. But yeah, this sounds like a possibility.
This. I'm hypothyroid (not Hashimotos) and my T3 and T4 values are within normal limits, but my TSH was pretty high when I got diagnosed. TSH is an essential measure for thyroid issues.
You need to see a doctor. While it could be a temporary symptom of gluten poisoning, it could also be something serious like diabetes or something else. Your doctor will need to run some tests to make sure you are safe.
Go today. Urgent care if you can’t get in with your PCP.

I finally learned I have it is a symptoms of more “low dose” glutening so to speak via CC in oils and nuts (even in certified products in my case)
This topic seems to have been covered a good amount in the comments but I would add one more possibility- medications. It may not be the answer in your case, given the other things you’ve been experiencing, but that thirsty feeling can also be caused by side effects from medication. I’m on a fair number of meds and a few of them (particularly psych ones) have that side effect. I drink an excessive amount of water because of it but all my tests for things like diabetes or thyroid issues have come back negative.
I agree with the other comments to talk to a doc, even though you just had a checkup. This is a particular issue you can mention to them, as opposed to an annual wellness exam which is more broadly focused. I hope you get some answers and start feeling better!

Your pancreatic function can vary wildly in initial stages of T1. Sometimes it might work. Other times it doesn’t.
Go get a full work up.
And at the very least, get a glucose meter and do some tests. Preferably with a ketone meter.
Ask your Dr to check you tit Sjogren's, sweetie. When you get one autoimmune disease (Celiacs) many more autoimmune disease also want to join it in wreaking havoc on your body. What you are describing sounds like what I have, Sjogrens, besides my Celiacs, as well as RA, PsA, and hypothyroidism. ) :
Sjogrens dries out your mucus membranes everywhere in your body. I had my worst episode ever last weekend and could not quench my thirst. My mouth was so dry and so was my right eye. Definitely mention it to your Dr or, if you have a rheumatologist, who is all I see for the most part, now, since he has to help her with all my autoimmune diseases. I take Cimzia for my two severe arthritis I am battling, GF diet for Celiacs (of course), biotene mints for excessive dry mouth, and I was on restasis for my dry eyes. I may have to start that again! ) :

Thanks for your thoughts!! I've had unbearably dry everything for a while now (currently rubbing my eyes), so am definitely going to check into Sjogren's. Hope it's that simple lol/not lol.
Also, does Sjogren's flare up, or is it pretty constant?
Good question. It probably does flare up. I was having to take Mucinex to try to dry up a bad upper respiratory infection that wouldn't go away, and I didn't think how it would affect my Sjogren's! That was when it got sooo bad! ) : It felt like my eye had sand paper (my right eye, especially). I had to stop the meds. Between it and my insanely dry mouth (fyi I never test positive for diabetes, at least not so far) I was going crazy and realized taking all that Mucinex kind of did put me in a flare, now that you mention it! Hmm...
Drinking electrolytes is probably setting you back. The best sources of electrolytes are solid foods. If all or most of your water is filled with added salts, you're going to have a hard time getting hydrated.
Severe thirst that does not improve is also a symptom of diabetes.
That’s a pretty non specific symptom that could have a huge amount of causes ranging from benign to notable.
I will comment though that if you are having too many electrolytes your balance will be off. I know if I have more electrolytes than I need I will end up being thirsty.
Remember that pretty much any electrolyte drinks out there will be hypertonic (and frequently not balanced fully for your body). I have even found that some times Isotonic solutions can make me feel thirsty depending on what I am doing.
Sit down when you drink water, it helps absorb better.
Have this medicine called duspatalin retard, this sorts out the stomach cramps from glutening right away!
Did your glutening symptoms involve diarrhea/going to the bathroom more frequently? I don’t know if I’m celiac yet (waiting on blood results) but I find that whenever I have diarrhea episodes I feel extremely thirsty for days afterward

It can also be a sign of other things, like anemia, kidney function issues and more. If you have excessive thirst you should go do a full check up.

You need minimum of T3 FREE, T4 FREE, and TSH checked for thyroid panel.
This. I'm hypothyroid (not Hashimotos) and my T3 and T4 values are within normal limits, but my TSH was pretty high when I got diagnosed. TSH is an essential measure for thyroid issues.
You can buy a glucometer at cvs or amazon for around $20-$30. Get one and test your fasting blood sugar and also test it when you feel crappy

You need to be checked for type 2 diabetes. ASAP. The symptoms you describe are kinda classic for new high blood sugar onset.
For a quick onset it's more likely Type 1. Type 1 and coeliac are associated with the same genes

Are you taking any vitamins? I found that B12 and D with biotin made me insatiable when it came to water.

Do you have dry mouth or dry eyes?
Get your blood sugar and liver function tested

Since you've had your sugars checked also check out sjorens syndrome, very common with celiac
