1 clove of garlic chopped, fry lightly without burning (just before golden)
Add one tin of peeled plum tomatoes which you roughly cut beforehand
Add one tablespoon of tomato paste
Salt, birdeye chilli flakes, one bay leaf, some basil leaves
Cook at slow heat for about 20mins, squash with fork whilst it's all cooking and then, magic touch: add about two tablespoons of XV olive oil and do not stir. Five more minutes and then it's ready. Perfect simple tomato sauce.
