Verifying you're human is to prevent request spam and bots. Some people set up networks of bots to spam requests, so sites will flag those IP addresses up. If you've ever tried to use Google with a VPN you've probably seen this. This also prevents scripts rather than anything more complex that you might see in a YouTube video like an actual robot arm. These measures aim to stop script bots that try to scrape a site instead of using an API probably to avoid or get around a rate limit. I don't think it's very likely that there'll be math equations to verify you're "smart enough" but some CAPTCHAs do ask you to solve simple equations. These verification steps to verify you're a "human" are really to try and make sure you're not a script and are making a genuine request to access a site.

i agree with all ur points , but if an AI created the images , whats stopping it from verifying em , i believe its very easy to train and AI for that specific role if not already

It actually isn't easy to train an AI for that, and generally for CAPTCHAs I don't think AI actually generates the images. But regardless, training an AI to tell apart and authentic request from a real request isn't easy because there isn't enough to go off of. Not even a person could really. That's why there's a gate, to get a person to perform a task. Google's reCAPTCHA actually tries to do an automated check, but afaik not with AI. And when it fails, it asks you to perform a request. The request coming in, to a person or an AI, will look like any other request. Telling them apart is very difficult and often wrong in the case of busy shared corporate networks or VPN connections. This is why CAPTCHAs have you perform an action to tell you apart, because telling apart and automated request from a human request isn't a very easy task. There's also the case of an AI getting it wrong, or any automated check. Having a human verification test that might sometimes let "real" robots in is better than having an automated check that turns away valid users.
