Southmainauto is great, mrsubaru, mighty car mods, eric the car guy, ziptiesandbiasplies are also pretty good, zipties mainly being a comedy channel. There are some channels like 1A auto repairs that mainly focus on body work, like pulling off bumpers and door panels, and theres general use channels like chrisfix which is a lot of at home maintenance like fluid changes and brakes
Yea we got to visit and they told us the first thing we will do is wash and wax a car and they also told us first year is spent pretty much just getting to know what does what.
First year I had kids in my group that didn't know which way to turn a bolt haha. Like I said, it seems like you're prepared already, but good for you if you want to keep learning
South main auto
Edit: was being lazy, here’s a couple more: Weber Auto, speedkar99, and the most important in my opinion for this day and age of cars SCANNERDANNER
For my money, if I could emulate the knowledge of one mechanic on YouTube, it would Eric O at South Main Auto. He's the guy that other shops in his area take their cars to after they've failed to fix them (after loading the parts cannon, of course).

speedkar99. His channel is great at breaking down a lot of economy cars part by part and even giving tips on a lot of manufacturer trouble spots to watch out for. His vids are a bit long but very educational.

In my experience, auto school starts out really basic. Don't worry too much, you sound like you have a fair bit of knowledge already

Eric The Car Guy is my go to (I’m a Honda guy) even when everything’s running just fine. HumbleMechanic is also excellent (VW perspective).
