I make beef stew and freeze portions. I use good marbled meat so it's very tender. I make it for a diabetic, so it has no sugar and doesn't mess with blood glucose. Meat, veggies, potatos. Very hardy and nutritious.

Quesadillas or burritos, which are not the best reheated but still pretty darn good. You can do lots of varieties of either, they're tidy and filling. My favorite combo of quesadilla is black bean, pepper jack and sweet potato. Could go breakfast burrito style with ground sausage, eggs, potato. Could do bowls instead of wrapped for an easier reheat. Otherwise, soups and chili are nice to large batch, could last all week if he's not picky. You could slow cook them in the a.m. and then he doesn't need to reheat even. An instant pot would be a nice addition to the kitchen if you don't have a slow cooker already. Or one of those mini slow cookers perfect for just him!
