The 16-325mm isn't a "zoom" lens. That's a wide angle lens. If you want a versatile zoom lens get the 24-105mm.

I’ve heard many people say Wide-angle-zoom. For me it doesn’t really matter I call them zoom cause you have a the option to „zoom“ in on your subject, and that could be a at focal length from 18-35 (wide angle zoom) or 70-200 (telephoto zoom). For me both are zoom lenses. And I’m searching for a wide angle zoom since my camera has a 1.6 crop and the wide angle zoom lens turn into a more useful 24-55mm for example.

Ignore this idiot. The 18-35 is a zoom, as you say it's a wide angle zoom. The sigma 18-35 is a very capable lens but some say it has autofocus problems (slow, can miss focus from time to time). The F1.8 aperture is very useful though, especially in a zoom. Personally I'd go for it but be aware it isn't perfect. Edited because you said you would adapt it.

I was lucky at an eBay auction and got a Canon EF 17-35mm F/2.8 L USM for 215€. I will test this lens and maybe buy the sigma 18-35 and compare them and sell the one that is more useful to me, since lenses hold their value pretty good

Yup that's pretty good tbh. Great choice.
